No-Bake White Chocolate Peanut Butter Bars

Welcome peanut butter lovers! This easy no-bake white chocolate peanut butter bar recipe is for you. The insides are like a peanut butter cup and the outside is covered with a white chocolate peanut butter mixture. All this goodness is no-bake! This recipe is so easy and so delicious!

Ingredients:

  • 8 tablespoons unsalted butter, melted
  • 2 cups graham cracker crumbs
  • 1 1/4 cups powdered sugar
  • 3/4 cups + 2 tablespoons creamy peanut butter, divided
  • 1 cup white chocolate chips

Instructions:

  • Line a 9×13″ pan with foil and spray with cooking spray.

  • Melt the butter. In a large bowl combine the melted butter, graham crackers crumbs, powdered sugar, and 3/4 cup of peanut butter. Mix by hand until all ingredients are combined. Place the mixture into the prepared pan and press firmly to spread the mixture over the bottom of the pan.

  • Place the remaining peanut butter and the white chocolate chips in a microwave-safe bowl. Heat at 50% power in 30 second increments. Be sure to stir the mixture between increments. Continue until white chocolate and peanut butter are smooth. Pour over over the bars and spread with a spatula until the bars are evenly coated.

  • Chill for at least an hour to set. Next, slice into bars.
  • These bars can be stored in an airtight container at room temperature or in the refrigerator, depending on how warm your house is. The chocolate will melt if it’s too hot.

Author’s Notes:

  • Lining the pan with foil serves 2 purposes. First, the bars can be easily removed from the pan by lifting them out of the pan to cut. Secondly, there is less mess to clean after the bars have been removed.
  • Next time I try these bars, I am going to use milk or dark chocolate chips in the outer coating layer.
  • I used a food processor to grind my own graham crackers into crumbs. It took 2 sleeves of crackers to make the 2 cups of cracker crumbs needed for this recipe.
