During these hot days of summer, I want quick and easy meals that also are delicious. This Chicken and Rice Fajitas in Foil is such a recipe. The foil packets can be cooked in the oven, on the grill, or in a camp fire and then thrown away for easy clean up. This recipe was hit with my family.
Ingredients:
- 4 large sheets of foil
- cooking spray
- 1 onion, sliced
- Homemade Fajitas Seasoning Mix
- 1 cup of minute rice
- 1 cup warm water
- 4 skinless, boneless chicken breasts
- salt and pepper, to taste
- 1 red bell pepper, 1 orange bell pepper, and 1 green bell pepper, slice
- 1/4 cup shredded mild cheddar cheese
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- lime juice
Optional Garnishes:
- sliced avocado
- sour cream
- cilantro
Instructions:
- Preheat the oven to 400F.
- Next, spray foil sheets with cooking spray and set aside.
- Prepare the Fajitas Seasoning Mix. (look in Author’s Notes for recipe)
- Combine rice, water, and 1 tablespoon of the Fajitas Seasoning Mix in a bowl. Stir until well combined.
- Then, using a slotted spoon, divide the rice mixture evenly between the 4 foil sheets.
- Season the the chicken breasts with salt, pepper, and Fajitas Seasoning Mix.
- Place chicken over the rice.
- Next, arrange peppers and onions on the sides of the chicken breasts.
- Drizzle olive oil over all of the ingredients.
- Combine shredded cheeses and divide the cheese mixture evenly over the chicken breasts.
- Fold the sides of the foil over the chicken, covering completely. Seal the packets closed.
- Then, place the packets on a large baking sheet.
- Bake for 30 to 35 minutes or until the chicken’s internal temperature reaches 165F.
- Remove from the oven and carefully open the packets and place under the broiler of 3 to 4 minutes.
- Remove from broiler.
- Squeeze lime juice over the food.
- Finally, garnish and serve.
Author’s Notes:
- Homemade Fajitas Seasoning Mix Recipe: 1 teaspoon each of chili powder, paprika, garlic powder, cumin, 1/2 teaspoon of dried oregano, 1 teaspoon salt, and 1/4 teaspoon freshly ground pepper. Combine well and use. This seasoning mix is enough for this recipe.
- To cook packets of the grill: Preheat the grill to medium heat and close the lid. Then, cook on medium to medium high heat depending on the grill for about 10-15 minutes or until the chicken is cooked through. Add the desired toppings and enjoy.
- To cook packet in a camp fire: In addition, the foil packets can be cooked in the hot coals of a campfire for about 20 minutes or until the chicken is cooked through. Add desired toppings and enjoy.
- Internal temperature of the chicken breasts should be 165 degrees Fahrenheit.
