Belle’s Easy Homemade Potato Salad

With my family, potato salad  is one of those tasty side dishes that goes with anything.  We love it with ham, chicken, hamburgers, and hotdogs.   I learned to make potato salad by watching my Daddy make his.  Through the years, I have added a few variations from time to time as cooks will do.  I hope you enjoy this family favorite.

Belle’s Easy Homemade Potato Salad

Ingredients:

  • 8 potatoes
  • 4 eggs, boiled and chopped
  • 1/3 cup sweet onion, chopped
  • 1/3 cup green bell pepper, chopped
  • 2 stalks celery, chopped fine
  • 1/3 cup sweet pickle relish
  • 1 tablespoon mustard
  • 1/4 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions:

  1.  Wash and clean potatoes; dice potatoes.

2.  Put 4 eggs in a pot and cover with cold water and bring to a boil.  Turn off heat, cover with a lid, and let stand for 10 minutes.

3.  Put diced potatoes in a pot and cover with cold water and boil until tender.  Drain and let cool.  Note: If you don’t let the potatoes cool before you         mix them with the other ingredients, you will have mashed potatoes instead of potato salad.   Don’t ask me how I know this!

4.  Peel eggs and dice into small chunks.  I slice the centers out of the eggs to use for the top the salad when finished.

5.  In a large mixing bowl, mix all ingredients together.  Stir until all the potatoes have been covered with the mayonnaise and other ingredients are mixed well.  Do a taste test.   You may need to add more salt or mayonnaise.  Adjust to your taste.

6.  Place the potato salad in a serving dish and top with the sliced boiled egg.  You may sprinkle the top of the potato salad with paprika for decoration.

7.  Cover and chill in the refrigerator for about 2 hours before serving.  This dish even tastes better the next day.

  • You may use red or green onions if you prefer.
  • Bacon and/or cheese can be added to this recipe.
