Twenty-Minute Skillet Goulash for two!

This easy and cheesy comfort food meal is just right amount for two people on a cool Fall evening or anytime really. Serve with a salad and garlic bread and enjoy!

Ingredients:

  • 1 pound ground beef
  • 1/4 cup onion
  • 1 and 1/4 cups beef broth
  • 1 cup spaghetti sauce
  • 3/4 cup elbow macaroni
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup mozzarella cheese

Instructions:

  1. In a large cast iron skillet, over medium heat, brown the ground beef and onions for 5 to 7 minutes or until no pink remains. Stir frequently and drain off any excess liquid.
  2. Add the beef broth, spaghetti sauce, macaroni, garlic powder, salt, and black pepper; mix well.
  3. Cover the skillet and reduce the heat to medium low, and simmer 7 to 9 minutes or until the macaroni is tender.
  4. Sprinkle with cheese and simmer 1 to 2 minutes or until the cheese is melted. Serve and enjoy.

Author’s Note:

  • Make sure to cover the skillet when cooking the macaroni or it won’t cook properly.
