Chicken Parmesan Fetuccine Instant Pot Style

A pasta dish of any kind is a big hit with my family. We love it anytime and anywhere. This easy, “dump” recipe, lets you put all the ingredients in, set the time, and walk away until it is finished. Stir and serve an easy, tasty meal.

Ingredients:

  • 3 Tbsp Butter, cut in a few small pieces
  • 4 cloves Garlic, minced, or to taste
  • 2 cups Chicken Broth
  • 1 1/2 cups Heavy Cream
  • 1 tsp Salt, or to taste
  • 1/2 tsp Pepper
  • 10 oz Fettuccine Noodles, broken in half
  • 1 lb Chicken Breasts, uncooked cut in bite sized pieces (chicken is optional)
  • 1 cup Parmesan Cheese, grated

Instructions:

  1. Place the butter and the garlic in the pot.
  2. Pour in the chicken broth and heavy cream.
  3. Sprinkle in the fettuccine noodles, in a random pattern, and gently press them down.
  4. If Adding Chicken: Add the chicken, and space evenly over the noodles. Sprinkle with the salt and pepper.
  5. Press down on the mixture to submerge as many of the noodle as possible. Then place the lid on the pot, lock in place, and set the steam release knob to Sealing position.
  6. Press the Pressure Cook/Manual button or dial, then the +/- to select 6 minutes (7or 8 minutes for a softer noodle). After the cook cycle has finished, let the pot sit undisturbed for 5 minutes (5 minute natural release). 
  7. Manually release the remaining pressure in short bursts so no sauce spews out with the steam. Be careful not to get burned. Use a long handle wooden spoon to help with this.
  8. Carefully open the lid and give the mixture a good stir. It may be a little soupy, but it will thicken up.
  9. Add the grated parmesan and stir it in. If it’s still a little too thin, just add a little more parmesan.
  10. Serving suggestion: serve with a salad and some bread. Enjoy!

Author’s Notes:

  • For the garlic, you may use 1 1/2 teaspoons Garlic Powder
  • I used a 6 quart Instant Pot.
  • I used half a box of fetuccine noodles in my recipe.
  • I used more parmesan cheese than 1 cup. I also, sprinkled cheese on top of the dish before serving.
  • I will add some frozen peas to my recipe the next time I prepare this recipe.
  • Use a long handle wooden spoon to help with the Mannual Release so you don’t get burned.
