Chicken Lo Mein Instant Pot Style

I enjoy reading recipes and writing for this blog I am always in search of new ones to try and then post. Lately, I have become obsessed with Instant Pot cooking. Not only does the Instant Pot prepare meals quickly, but they are so good and family approved. In addition, I can cook on these hot summer days without adding heat to my kitchen from my gas stove or my oven.

This easy recipe for Chicken Lo Mein cooked in the Instant Pot is not only easy but it is better than take out!

Ingredients:

  • 1 pound of chicken breast, cubed
  • 2 tablespoons oil
  • 1 tablespoon minced garlic
  • 1 small onion, diced
  • 3/4 cup soy sauce
  • 1/2 cup Hoisin sauce
  • 2 tablespoons brown sugar
  • 1 cup shredded cabbage
  • 1/2 cup matchstick carrots
  • 5 to 6 mushrooms, sliced
  • 2 cups water
  • 7 ounces of lo mein noodles
  • sliced green onion for garnish, optional

Directions:

  1. Place the cubed chicken, oil, minced garlic, and diced onion in the instant pot. Turn pot to saute and cook the mixture until the chicken is brown.

2. Stir in soy sauce, Hoisin sauce, brown sugar, cabbage, carrots, mushrooms, and water.

3. Add the pasta to the pot. Make sure the pasta is covered with the liquid.

4. Place the lid on the pot and seal. Close the pressure release valve. Then set the Instant Pot to mannual high pressure for 5 minutes. When the cooking cycle is complete, do a quick release of the steam and open the pot.

After quick release of steam, open the pot.

5. Stir the Chicken Lo Mein before serving and if desired, garnish with green onions.

Chicken Lo Mein Instant Pot Style

Author’s Notes:

  • I used a 6 quart Instant Pot.
  • I used 2 cups of chicken broth instead of the water.
  • Next time I cook this recipe, I will use low sodium soy sauce and chicken broth.
  • I did not have the Hoisin sauce for this recipe, so I used a few drops of Oyster sauce instead.
  • Olive oil was used to saute the chicken, garlic, and onions.
  • Next time I cook this recipe, I will double the amount of the vegetables because they cook down and the cabbage was not seen at the end of the cooking cycle.
  • I used a store bought package of slaw mix as my shredded cabbage and a small jar of sliced mushrooms.
  • Green onions were not added as a garnish.
