Banana Bread

This easy recipe for banana bread is the best I have ever tasted and is so easy to make. I like this at breakfast time with my cup of coffee, but this recipe also makes a good snack anytime of the day.

Ingredients:

  • 3 to 4 ripened bananas
  • 2 eggs
  • 2/3 cup oil
  • 1/3 cup buttermilk
  • 1-2/3 cup sugar
  • 2-1/2 cups plain flour
  • 1-1/2 teaspoon baking soda
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional: 1 package of Craisins or blueberries may be added.


Directions:
Place bananas in the bowl of your mixer. Begin mashing bananas on low. Add in the oil. Continue to mix.

Next, add in the eggs one at a time to make sure eggs are mixed in well.

Add in the buttermilk. Mix well.

Add the dry ingredients (plain flour, baking soda, baking powder, salt) to a sifter and sift the ingredients together. Then, add to the wet ingredients in the mixing bowl, slowly until well combined. Turn off mixer.

At this time, add the blueberries or Craisins if you are planning to add them. Use a spatula to gently mix into the batter.

Pour into prepared loaf pans or muffin pans.

Bake in a preheated oven at 300 degrees for one hour.

Makes 2 loaves or 24 muffins.
