Egg Nog Pound Cake

This Christmas, I prepared a buffet of goodies for my family and friends to enjoy.  This easy and tasty pound cake recipe was a big hit and will be included in future family Christmas gatherings.

Ingredients:

  • 1 (16 oz.) package pound cake mix
  • 2 large eggs
  • 1/2 teaspoon freshly grated nutmeg
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups eggnog

Directions:

  1.  Preheat oven to 350 degrees.
  2. Beat all ingredients together on low speed with an electric mixer until blended.  Increase speed to medium and beat 2 minutes.
  3. Pour into a lightly greased 9 x 5 loaf pan.
  4. Bake at 350 degrees for 1 hour or until a long wooden stick inserted in the center of cake comes out clean.  
  5. Cool in pan on a wire rack for 10 minutes.  Remove from pan to wire rack.  Let cool completely for about an hour.
  6. Sprinkle the top of the cake with sifted powered sugar.  Put on cake plate.
