For food safety it’s recommend to cook through right after searing the beef. You can however cut carrots, herbs, onion and store in the fridge.

I was trying to recreate the pot roast I remembered my mom making when I was a kid, I’m 41 and have literally never made one (I was vegetarian for a long time) but now I am pregnant and randomly craving this dish. I had exactly a 3 lb roast, my crock pot seemed a little crowded but I stuffed it all in there. I didn’t touch it for 8 1/2 hours and then opened it up, the meat literally fell apart. I sliced to the potatoes and made the gravy. This is a 10/10 dish.
