Pretty good. A bit bland. Needs a lot of salt. Used bean puree and still wasn’t thick enough.

This recipe suggests 6 servings. Maybe if the servings were very small. Seemed more like about 3 servings. Especially since it suggests as a main course.

The recipe states 1 pound if you are using a slow cooker otherwise 2 1/2 cups if you are using a rotisserie chicken.

So delicious for the colder months, I used bone broth for an extra protein boost and added depth of flavor, as well as reduced the cream cheese to 5oz. Served warm with a slice of sourdough was amazing.

I have found “off” brands do not melt like Philadelphia Brand cream cheese. It also helps if you soften the cream cheese before adding – I sometimes do this in the microwave before adding to soup.

I made this for the neighborhood chili-cook-off and won first prize over 22 other entries!

I made it in a crock pot.

Couple tweaks:
– I pureed most of the chili beans to mix the flavor in the sauce (I’m not really a big fan of beans, but it is IS chili…so when in Rome…)
– Omitted the yellow corn (just never seemed like a chili ingredient to me)

I ADDED:
• 1 can Bushes White Hominy Maiz Pozolero (white corn, husk removed – kinda looks like a bean and tasted good, flavor boost)
• ½ can black beans (mainly for visual effect in white sauce)
• 1 can Hunts chopped tomatoes with basil, garlic.
• 1 package ranch dressing mix (big flavor boost!)

I think what helped push this already good recipe over top was:

– Pureeing most of the white kidney beans to thicken sauce & spread the flavor throughout. Very effective.
– White Hominy Maiz Pozolero (white corn, no husk, looks like a bean, so nice flavor surprise)
– Ranch dressing package. This was a great add.

I omitted:
• 1 (7 oz) can diced green chilies (perhaps half a can?)
• 1/4 tsp cayenne pepper
• 1/2 tsp dried oregano
• 1/2 tsp ground coriander
• 1 ¼ cup frozen or fresh corn (NEVER canned)
