Smoky, spicy, highly flavorful seasoned chicken kissed with a blackened exterior that envelops a juicy tender interior. It's a tastebud tantalizing recipe to make any day of the year!

It's so simple to make and cooks quickly. It's just a brisk mixing of spices, then generously seasoning the chicken and from there cooking in a super hot skillet for that beautiful finish.

There's a plethora of delicious sides to pair with it (lots of ideas below), and there's also so much you can do with this chicken. My personal favorites for serving are pairing with coconut rice, corn, and mango avocado salsa (for a bit of that sweet + heat) but there's endless options.

And it doesn't just need to be served solo. Try it in tacos, add it to pasta (like creamy alfredo), or toss into a salad.

An Easy Tofu Scramble Recipe

I never used to be a fan of tofu but that was likely because it was under-seasoned or just not cooked right. Tofu tastes incredibly plain and mild on it's own as is but when seasoned right and sautéed it can transform into something that's actually super tasty.

Tofu is very absorbent to flavors so it makes it highly adaptable which is great for these "scrambled eggs" using tofu. They're flavorfully seasoned with southwestern spices that soak right in, and it's cooked in a hot skillet until golden brown to take on more flavor. And I think you'll enjoy that the texture is very similar to scrambled eggs.

It's a quick to make vegan breakfast and it pairs beautifully with whole grain toast and sliced avocado. This has been a go-to breakfast for me lately and it actually re-heats really well so I can get a few breakfast meals out of it.

Feel free to add in other vegetables (things like mushrooms, zucchini, or tomatoes) and you could even splurge a little and add some cheese (vegan or regular) at the end.

Healthy Carrot Soup

Though this gingery carrot soup recipe may seem ideal for spring it's actually an excellent soup to serve any time of year because you can almost always get good quality carrots at the store year round. And they are a staple food most of us keep stocked in the fridge.

This soup has such a delicious inviting flavor between it's sweet carrot goodness, the bright ginger and garlic, a light background spice boost, and the richness of the coconut milk.

It's a vegan soup but can also be adapted to use what you have on hand if you don't intend to make it vegan. Ingredients such as chicken broth, and half and half or heavy cream can be used.

Guests will love it as an appetizer for dinner, or serve it as a main course at lunch with whole grain bread or no knead homemade bread (great for dipping of course), or a grilled cheese sandwich.

Chili Con Carne

Chili con carne is a robust and rich chili made with beef roast that includes deeply flavored Mexican chilies and spices all simmered together in a stew-like dish. This is a Texas style chili and it's made of mostly beef and chili sauce without lots of added fillers.

It uses a generous amount of browned beef chuck chunks rather than ground hamburger and this really builds up the meaty flavor. Whole dried chilies are used in place of pre-ground store-bought chili powder, and those chilies are toasted in a skillet then soaked in liquid and pureed in a blender to build the base of this hearty chili.

The chili is simmered low and slow on the stovetop for well harmonized depth of flavor and to tenderize the beef.

It's an impressive made from scratch chili that may seem intimidating at first but once you try it you'll see it's easier to make than you'd think.

It's also a tasty change from the original style chili and you may find tasters to love it even more, especially meat lovers! Plus it could just win your next chili cook off!

What is Beef Shawarma?

If you’ve never had beef shawarma, you’re in for a treat.! A famous Middle Eastern street food, shawarma is made with chicken or beef that is heavily marinated in oil, lemon juice, and warm spices. Then, it is placed on a vertical rotisserie or spit and slow-roasted for days until it is unbelievably tender. 

Most commonly, it is shaved off and served stuffed into bread with fresh toppings and a drizzle of tahini or tzatziki. However, you can also find it presented as part of a platter along with sides like tabbouleh and hummus. No matter how it’s plated, it’s always incredible and is guaranteed to leave you coming back for more. 

Don’t worry, though. You don’t need a fancy spit to make your own beef shawarma at home. I’ll show you how to create the same bold flavor and tender texture by searing on the stovetop instead!

Chicken pieces are marinated in a warmly spiced, brightly flavorful lemon and yogurt sauce then grilled to tender, juicy perfection. It’s easy to make and pairs wonderfully with a variety of sides.

What Is Shish Tawook?

In the Turkish language, “shish” means skewer, and “tawook,” also sometimes spelled tauk, means chicken. Put together, the two translate to mean chicken skewer or chicken kebab. 

Believed to have first been served during the Ottoman Empire, shish tawook quickly became popular throughout the entire Middle East, spreading into Egypt and Levant during the Ottoman’s rule. 

It features pieces of chicken that are soaked in a yogurt marinade infused with garlic, lemon juice, and lots of warm spices. It is then grilled or baked until the chicken is fully cooked and tender. 

Thanks to the marinade, chicken shish tawook always turns out juicy and is virtually fail proof. It’s one of my all-time favorite recipes and is always what I order when we dine at Middle Eastern restaurants. Luckily, it’s simple to make at home, too! 

What’s the difference between chicken shish tawook and chicken shawarma? 

Both dishes are made with boneless skinless chicken and Middle Eastern spices, but they are not the same. There are key differences in how the two recipes are created and prepared. 

  • Shish tawook is created with a creamy, yogurt-based marinade that features garlic, warm seasonings, and tomato paste. As a result, it has a rich, bold flavor and a distinct hue. 
  • Alternatively, shawarma does not use yogurt or tomato paste. Instead, an olive oil-based marinade creates a stronger citrus flavor with warmer seasonings and a slightly spicier flavor. 
  • Traditionally, shish tawook is grilled on skewers, and shawarma roasts long and slow on a spit. Although, you can also make oven baked chicken shawarma at home.

Creamy Sun Dried Tomato Pasta 

This tomato pasta recipe is one of my go-to options for busy weeknights. Made with just one pot and a saucepan, it’s ready in just a little over 30 minutes. You really can’t go wrong. 

If you’ve never had sun-dried tomatoes in pasta, prepare to be amazed. They’re one of my favorite ways to spruce up a simple dish with a pop of color and a rich, savory, slightly smokey flavor. 

I love to include them in recipes like my sun dried tomato basil and Parmesan orzo with chicken and this spaghetti with sun dried tomatoes and spinach. However, this tomato pasta might be my favorite sun-dried tomato recipe yet. 

Made with al dente pasta tossed in a vibrant tomato sauce, it’s rich, creamy, and unbelievably satisfying. Plus, it features fresh spinach for a boost of nutrients and fiber. 

Basically, this sun dried tomato pasta has everything you could want in a homemade dinner and more. Quick to make, it’s easy enough for weeknights yet elegant enough for special occasions. It’s sure to have all of your guests coming back for more!

Crispy Onion Rings

When the craving for onion rings strikes sometimes you just don't want to leave the comfort of home to get them. Or perhaps you have a hungry crowd to feed and want to impress with this crave-worthy appetizer or side dish.

Luckily making onion rings at home is easier than you may think and once you learn the method it's a breeze from then on out.

You follow a simple breading process to coat the onion rings, then deep fry in hot oil in batches until beautifully golden brown and crisp. You'll just need a little patience to work in batches.

From there serve with your favorite sauces. Excellent choices are fry sauce, ketchup, ranch dressing, or bbq sauce. Then just prepare for them to disappear as quickly as you put them out!

Note that I've shared other options to cook them if you'd prefer not to deep fry. You can bake in the oven or cook in an air fryer as well.

With any of the three options though you'll end with something completely delicious!
