Homemade Shrimp Fried Rice

This easy shrimp fried rice recipe is a classic stir-fry favorite! It's completely delicious and easily worthy of being included in your dinner rotation on repeat.

I've made this version to be generous with the vegetables including carrots, onions, peas, bell pepper and cilantro. And you'll also find a fair amount of shrimp to make it more of a meal in one.

The important thing to note here (as with just about any fried rice recipe) is that you'll want to use leftover rice from the day before so it will soak up the moisture and doesn't end up soggy. In other words plan ahead if you don't usually have some on hand.

The chopping will take a bit of time but from there it's a total breeze and it cooks quickly. And when it's done to make it spicy finish your serving with Sriracha to your hearts content.

Thai Basil Beef Bowls

So I've decided I need more Thai food in my life. It's so uniquely flavorful and it always leaves me craving more.

These hearty Thai Basil Beef Bowls are no exception to that! It's a quick meal to throw together and it's jam-packed with amazing flavors! You'll love the way the sauce compliments the beef and the bold flavor of all the fresh basil used here (if you ask me fresh basil is one of the best ingredients known to mankind). You may also know this recipe as pad gra prow, pad kra pao, or even pad krapow depending on the restaurant and region.

If you haven't tried much Thai food here is a great place to start. It doesn't use loads of fish sauce, just enough to give it a nice depth of flavor, and it is an easy-to-follow straightforward recipe. This Thai Basil Beef recipe is gluten-free, but serving it over rice or noodles is delicious. Using a wok is best, but a large pan will suffice.

And once you buy the ingredients to make the sauce there are so many other Thai recipes you can use those ingredients for (like these Thai Chicken Tacos, or this easy Chicken Chow Mein, or this Chicken Pad Thai. All of them are delicious btw). Add this to your list of easy stir-fries that you can whip up on a busy weeknight, and don't be afraid to mix up your meats—ground beef instead of thin steak, pork, ground chicken, or turkey. For a vegetarian option, go for tofu, mushrooms, zucchini, and a fried egg on top!

Then if you are into hot sauce, the Sambal Oelek is good on pretty much anything. Take a walk around your local Asian grocery stores to find ingredients like Sambal Oelek, tofu, and Thai holy basil (sweet basil),  Add this recipe to your menu and try something new this week!

Thai Basil Beef

Thin pieces of tender steak are seared in a hot skillet, then bright fresh veggies are sautéed and you'll toss the two together along with a deliciously flavorful sauce. Then serve over steamed jasmine rice to complete the dish. A quick weeknight dinner you'll love!

  • 1 1/4 cups jasmine rice or long-grain white rice for serving
  • 1 lb top sirloin steak, ribeye steak or flank steak, (sliced against the grain into thin strips)
  • 1 tsp cornstarch
  • 2 Tbsp + 1 tsp vegetable oil
  • 1 red bell pepper, (cored and seeded, diced into 2-inch strips)
  • 1/2 large yellow onion, (thinly sliced)
  • 1 1/2 Tbsp minced garlic
  • 1 cup matchstick carrots
  • 1 cup fresh Thai basil or Italian basil leaves ((roughly chop larger leaves), plus more for garnish)
  • Sesame seeds ((optional))

Sauce

  • 3 Tbsp low-sodium soy sauce
  • 1 1/2 tsp cornstarch
  • 1/3 cup water
  • 1 1/2 Tbsp fish sauce
  • 1 Tbsp oyster sauce
  • 2 Tbsp packed brown sugar
  • 1 Tbsp fresh lime juice
  • 1 Tbsp Sambal Oelek, (or more to taste (optional))
  1. Prepare rice: Cook rice according to directions listed on package.

  2. For the sauce: In a small mixing bowl whisk together soy sauce and cornstarch until smooth. Stir in water, fish sauce, oyster sauce, brown sugar, lime juice and Sambal Oelek if using, set aside.
  3. For the beef: Toss beef with 1 Tbsp oil and 1 tsp cornstarch. Heat 1 Tbsp oil in a large skillet over moderately high heat. Add half of the beef and cook until browned on both sides but still slightly under-cooked in the center. Transfer beef to a plate while leaving oil in skillet and repeat with remaining 1 Tbsp oil and remaining half of the beef.

  4. For the veggies: Reduce heat slightly, add bell pepper, onions and garlic and saute until crisp tender, about 2 - 3 minutes (if needed you can add another 1 tsp of oil to the skillet). Add carrots and whisk sauce mixture once more then pour into skillet. 

  5. Allow sauce to simmer, stirring frequently, until thickened, about 1 minute. Return beef to skillet along with basil leaves, toss until basil has just wilted. Serve immediately over cooked rice garnished with small basil leaves and sesame seeds if desired.

Sweet and Sour Chicken Made a Little Lighter

I love Chinese take-out but isn't it just that much better when you make it at home?

I do love all the different kinds of fried Chinese chicken but I prefer not to eat fried foods very often so I've started making lighter versions of the classics that aren't deep fried in oil.

Instead they are sautéed in small amounts of oil and I also work to cut back on the sugars in the sauces. This Lighter Sweet and Sour Chicken is the perfect example that lighter versions of Chinese take-out can be just as good as the calorie heavy, high fat versions.

This version is dredged in a egg and cornstarch mixture before it's cooked which gives it a light crust and helps the sauce stick.

It's packed with veggies and fruit to make it healthier and of course you'll get plenty of protein from the chicken.

Who could resist this easy sweet and sour chicken? It has just the right amount of sweet and tart to it and it will leave you craving more! This is my idea of a delicious weeknight dinner the whole family can enjoy!

  1. Prepare the sauce.
  2. Dredge the chicken.
  3. Cook the chicken.
  4. Saute veggies.
  5. Toss everything with sauce.

More Chinese Take Out Favorites Try

Lighter Sweet and Sour Chicken

Deliciously flavorful sweet and sour chicken without the deep frying! Bite size chicken pieces are tossed with cornstarch and seared then veggies are sautéed until tender crisp, and to finish both are tossed with flavorful sweet and tangy sauce. So tasty!

Sauce

  • 1/2 tsp extra light olive oil or vegetable oil
  • 1 Tbsp minced garlic
  • 1 Tbsp peeled, (minced ginger)
  • 1/4 cup + 2 Tbsp low-sodium chicken broth, (divided)
  • 1/4 cup rice vinegar
  • 3 Tbsp honey
  • 2 1/2 Tbsp packed brown sugar
  • 2 Tbsp tomato paste
  • 1 Tbsp soy sauce
  • 1 1/2 tsp oyster sauce
  • 1 Tbsp cornstarch

Chicken

  • 1 1/2 lbs boneless skinless chicken breast, (diced into 1-inch pieces)
  • 1/4 cup cornstarch
  • 2 large egg whites
  • Salt and white or black pepper
  • 2 Tbsp extra light olive oil or vegetable oil

Veggie mixture

  • 2 tsp extra light olive oil or vegetable oil
  • 1 1/2 bell peppers, (diced into 3/4-inch pieces)
  • 1 small yellow onion, (diced into 3/4-inch pieces)
  • 1 1/2 cups fresh or canned pineapple chunks ((drain if using canned))
  1. For the sauce: Heat 1/2 tsp oil in a small saucepan over medium heat. Add garlic and ginger and saute 30 seconds. Remove from heat and stir in 1/4 cup of the chicken broth, rice vinegar, honey, brown sugar, tomato paste, soy sauce, and oyster sauce. 
  2. Season lightly with salt and pepper. In a small bowl whisk together remaining 2 Tbsp chicken broth with 1 Tbsp cornstarch, pour into sauce mixture. 
  3. Return to heat and bring mixture to a boil, whisking constantly, and allow to boil until thickened, about 1 minute. Remove from heat and set aside.
  4. For the chicken: In a medium mixing bowl whisk together cornstarch, egg whites, 1/2 tsp salt and 1/4 tsp pepper until well blended and slightly frothy. Add in chicken and toss to evenly coat. 
  5. Heat 1 Tbsp oil in a large non-stick saute pan over medium-high heat. Add half the chicken (work to space evenly apart) and cook, turning pieces occasionally, until cooked through and outsides are golden brown, about 7 minutes.

  6.  Transfer chicken to a plate and repeat process with remaining 1 Tbsp oil and chicken.
  7. For the veggie mixture: While the chicken is cooking, in a large skillet heat 2 tsp oil over medium-high heat. Add bell peppers and onions and saute until tender, about 6 - 8 minutes, adding in pineapple during last minute.
  8. Return chicken on plate to saute pan with chicken. Add veggie mixture and sauce to chicken. Toss to evenly coat. Serve warm over white or brown rice.
