So it seems that summer is in full swing, even though it's not quite yet official. I've been buying corn on the cob at least twice a week for the last month and the sun is blazing (quite literally, it's been 95 degrees). So, corn + sun = summer, right :)? There are so many things I love about summer - the beach days, the relaxing summer evening outdoor parties, BBQ flavors, the flowers, summer mornings, and vacation - but one thing I love the most of course is the food!

Fresh watermelon, fresh berries galore, grilled burgers every week, ice cream pretty much on a daily basis, and good food like this! This Creamy Confetti Corn with Bacon is the definition of summer! The ingredients start with freshly cut from the cob corn and ends with perfectly salty, crisp bacon. You just can't go wrong with this summer salad.

The corn salad dressing has such a delicious blend of flavors and textures and it will leave you craving it again and again! It will definitely be a hit at your next summer dinner party and it's one of the best uses you'll find for all that fresh summer corn! Ingredients for Creamy Confetti Corn with Bacon

  • Olive Oil
  • Red onion
  • Green onion
  • Avocado
  • Fresh corn kernels right from the husk of fresh sweet corn (frozen corn or canned corn is ok, but not as tasty)
  • Cilantro
  • Garlic
  • Cherry tomatoes or grape tomatoes
  • Lemon juice or lime juice
  • Fresh herbs
  • Neufchatel, cream, or Feta Cheese

You can convert this to a pasta salad by a toss with small-sized noodles, or pair it with grilled chicken for a satisfying summer meal.

Creamy Confetti Corn with Bacon

A delicious colorful blend of sweet corn, fresh bell pepper, crisp salty bacon, flavorful green onions and a rich cream cheese sauce. A side dish you'll want on repeat make every summer!

  • 4 1/2 cups fresh corn ((from about 7 ears))
  • 8 slices (8 oz) bacon, diced into small pieces
  • 2/3 cup small chopped red bell pepper
  • 1/2 cup chopped red onion
  • 1/2 tsp each salt and freshly ground black pepper, (or to taste)
  • 6 oz Neufchatel cheese, (diced into cubes (light cream cheese))
  • 1/3 cup milk, (then more as needed)
  • 1/3 cup chopped green onions ((optional))
  • 2 Tbsp chopped fresh parsley
  1. Cook bacon in a large skillet until crisp. Drain off rendered bacon fat while reserving 1 Tbsp in skillet. 
  2. Transfer bacon to a plate lined with paper towels to drain. Heat skillet with drippings over medium-high heat. 
  3. Add corn, bell pepper, red onion and season with salt and pepper. Saute until tender, about 6 minutes. 
  4. Add in Neufchatel cheese and milk and cook and stir until the cheese has melted. Add in more milk 1 Tbsp at a time to thin as needed (I added about 3 Tbsp more). 
  5. Stir in green onions, parsley and half the bacon. Transfer to a serving bowl and top with remaining bacon, serve warm.

I made it the week before Thanksgiving and loved it so I decided to make it to have around for the holidays with all the company we'd be having. When I know this is in the fridge I just keep reaching in and grabbing some veggies to dive into this dip. I love everything about it. I mean with ingredients like bacon, cheddar and ranch how could you go wrong? All the best things in one incredible dip that is destined to please. And the instructions? Just mix it all up!

Serve this delicious crack dip with:

Just FYI if you don't like things very salty you can use low-sodium bacon or you can add a little more sour cream to balance out the salt from the ranch seasoning packets. My family likes a bit of salt so it was perfect for us but if you don't like much salt then adjust accordingly. You can also make a thick dip more loose by adding a splash of buttermilk. What I love most about this recipe is that you can make it ahead of time. You can whip it up in a medium bowl before heading to any family function, just be sure and cover it with Glad Press'n Seal Wrap beforehand and leave it to chill in the fridge until ready to eat.

Bacon Cheddar Ranch Dip

Ranch Dip upgraded with bacon and cheddar! This dip is deliciously rich and creamy and packed to the max with flavor. It will get rave reviews all around from both young and old alike, and it's so easy to make.

  • 8 slices bacon ((9 oz) cooked until crisp, cooled and crumbled into bits)
  • 1 (8 oz) pkg. Neufchatel cheese, softened
  • 1 1/4 cups sour cream
  • 1 (1 oz) pkg. Hidden Valley® Original Ranch® Dressing Mix
  • 1 cup finely shredded sharp cheddar cheese
  • 1/3 cup chopped green onions ((from about 2))
  • Fresh vegetables and crackers (, for serving)
  1. Place Neufchatel cheese in a medium mixing bowl and using an electric hand mixer whip until smooth. Add sour cream and mix until smooth. Add dressing mix, cheddar cheese, green onions and bacon and stir and fold until well blended*. Serve with vegetables and crackers. Store dip in refrigerator in an airtight container.
  2. *If you'd like to have some of the cheddar, onions and bacon on top of the dip just set some aside before mixing the rest in.

I even topped my white pizza with it a few days ago (it was so good!). It actually makes cauliflower worth eating. To me, it's always just been one of those veggies that doesn't seem to have much to offer, especially when it comes to flavor. But, when you drizzle it with olive oil and roast it, incredible things happen. It slightly caramelizes and even sweetens a bit. It tastes almost entirely different than it did before going into the oven. So if you don't like cauliflower, roasting it might just change your opinion on that.

Here’s the the kind of breakfast that will have you ecstatically jumping out of bed, dancing in your jams and excited to start a fresh new day. Okay, well maybe not that intense (but it would be fun, just one day to start the day like that right =), but when you know this Overnight Blueberry French Toast is just soaking in the fridge just waiting to be baked in the oven, it’s not likely it will be one of those mornings where you cant stop hitting the snooze button.

This french toast is incredible to say the least! Cream cheese/Neufchatel cheese and blueberries just go together don’t they (like a fresh baked blueberry bagel covered with a generous layer of whipped cream cheese, mmmm)?

I love berries in my breakfast foods and they are one of my favorite additions to add to french toast. Not only are they packed with nutrition, but they add instant beauty and bold, natural color to a drab looking meal. They bring so much fresh flavor to any dish.

With this french toast you get a creamy sweetness, along with slight tang in every bite from the Neufchatel cheese, as well as a perfectly soft and moist, egg soaked french bread, which is layered with blueberries both inside and out. I added lemon zest and juice to the recipe because lemon and blueberry are simply the perfect pair.

The lemon just bring the blueberry flavor to life and balances out the sweetness. It doesn’t leave any room for a bland labeling. The use of Neufchatel cheese wasn’t an attempt to make this dish low fat, rather I chose Neufchatel cheese because it has lighter, more spreadable consistency than cream cheese.

The lower amount of calories and fat it contains vs. cream cheese is a definite bonus though. Enjoy!

Overnight Blueberry French Toast

French toast is dotted with blueberries, cream cheese then soaked overnight in a custard mixture and baked the next morning. The perfect weekend breakfast!

  • 1 loaf day old french bread
  • 12 oz . Neufchatel cheese ((aka 1/3 less fat cream cheese)*)
  • 1/4 cup powdered sugar
  • 1 1/2 tsp vanilla (, divided)
  • 2 cups fresh or frozen blueberries ((no thawing necessary if frozen))
  • Zest of 1 lemon**
  • 10 large eggs
  • 2 cups milk
  • 5 Tbsp granulated sugar (, divided)

Blueberry Syrup

  • 3/4 cup granulated sugar
  • 1 1/2 Tbsp cornstarch ((use 2 Tbsp for thicker syrup))
  • 3/4 cup cold water
  • 1 1/2 Tbsp fresh lemon juice
  • 1 1/2 cups fresh or frozen blueberries ((no thawing necessary if frozen))
  1. Cut 1/2-inch off both ends of bread and discard (or eat). Cut loaf into 1-inch slices then cut each slice into 1-inch cubes (I cut the loaf in half first then kept the cubes from each half separate so it would be easier to determine half). Spread half of the bread cubes into an even layer in a buttered 13 by 9-inch baking dish, set aside remaining bread cubes.
  2. In a small bowl, using an electric hand mixer, blend together Nuefchatel cheese, powdered sugar and 1/2 tsp vanilla. In a separate bowl stir together lemon zest and 1 Tbsp sugar. Using a rubber spatula and a clean fingertip, spread Nuefchatel cheese mixture over bread cube layer in baking dish. Sprinkle blueberries over Nuefchatel cheese layer then sprinkle lemon zest mixture evenly over blueberry layer. Spread remaining bread cubes into an even layer over top of blueberries.
  3. In a blender, blend together eggs, milk, remaining 1/4 cup sugar and remaining 1 tsp vanilla on low speed until well blended, about 10 seconds. Slowly pour mixture evenly over top of bread cubes in baking dish. Cover with plastic wrap and refrigerate 8 hours or overnight.
  4. The following morning, remove baking dish from refrigerator and allow to rest at room temperature for 30 minutes. Preheat oven to 350 degrees during the last 10 minutes of resting.
  5. Remove plastic wrap. Cover baking dish with aluminium foil and bake in preheated oven 30 minutes, then remove foil and continue to bake 25 - 35 minutes, until golden brown (if it is becoming too golden brown but isn't cooked through then you can cover with foil again during the last few minutes of baking). Allow to rest 5 minutes, then cut into servings and serve warm topped with blueberry syrup and sweetened whipped cream if desired.
  6. *Regular cream cheese would also work, but I'd recommend likely thinning out the cream cheese mixture with 1 to 2 Tbsp milk to make it a more spreadable consistency.
  7. **After zesting lemon, reserve it in a Ziploc bag to juice the following morning for use in the blueberry syrup.

For the blueberry syrup:

  1. In a medium saucepan, whisk together granulated sugar and cornstarch. Stir in cold water and lemon juice. Mix in blueberries. Bring mixture to a boil over medium-high heat, stirring constantly. Once mixture reaches a boil, reduce heat slightly and allow to gently boil for 2 - 3 minutes until thickened and blueberries have burst, while stirring constantly. Allow to cool slightly before serving.
