Baking sweet potatoes twice takes a little more time, but is well worth the effort. Orange flesh sweet potatoes are baked until nicely tender, then they are hollowed out into boat-like shapes. From there, the sweet potato filling is mashed and blended with butter, cream, maple syrup, and a hint of spices.
Once perfectly combined, return the mashed sweet potatoes to the skins, cover them with a pecan streusel topping, and bake until it's satisfyingly crisp. And last but not least they are finished with melty, broiled, and beautiful browned mini marshmallows.

Then of course there's the fact that people of all ages love them. Sometimes if I don't know what to bring to a party I just go with rice krispie treats and I rarely return home with any left.
Rice Krispie treats were actually one of the very first things I learned how to make. And since then it's probably a bit crazy how many times I've made them (definitely in the hundreds).
My version (or I should say my Mom's version, she taught me how to make these) uses the same ingredients as the classic, I just use different ratios.
We are talking more marshmallows and more butter! It makes them deliciously sweet and chewy, and perfectly rich and buttery!

They are made using the classic Rice Krispies treat recipe that we all love, but instead of the classic squares they are tinted green and shaped into cones, then covered in sprinkles.
So basically a total upgrade :).
The filling is just made up of a few basic ingredients - chocolate chips, marshmallows, butter, milk, cream, vanilla. You know all the good things in life.
You don't need to chop chocolate, you don't need to gently heat or whip any eggs as in many mousse recipes, and you don't eve need to make a pie crust!

I love making a variety of cookies during the holidays and there always need to be a chocolate cookie of some kind right?
I've had hot chocolate cookies on my to-do list for probably the last 4 years and I've finally gotten around to trying them.
But I decided to add a peppermint twist to them because I love the chocolate and peppermint combination.
I love that the base for these cookies is packed with chocolate. Not just cocoa but a lot of chopped chocolate.
It gives them a rich flavor and a chewy, fudgy texture. They're almost like a brownie cookie.
One thing these cookies really remind me of is Mississippi Mud Cake. It's that chocolate base, marshmallow and chocolate icing combination.
I think I'd also love these cookies drizzled with chocolate in place of the icing.
Don't get me wrong the icing is delicious but next time I might try chocolate. The more chocolate the better, right?
Just be sure to enjoy a few of these cookies warm. They are of course still good for a couple of days but they are total perfection when you ice them warm from the oven and eat a couple right away - they're more like hot chocolate that way too.

Your busy holiday weeks need a break, so take a breather and make a batch of cookies.
These cookies are the perfect festive holiday treat! Not to mention they're a chocolate lovers dream! Soft, chewy chocolate cookies are layered with a sweet vanilla marshmallow, chocolate icing, and crushed peppermint candies. Who could resist?
For the cookies: Add chocolate and butter to a medium microwave safe mixing bowl. Heat in microwave in 30 second intervals, stirring well between intervals until melted and smooth, set aside to cool slightly.
With mixer set on low speed slowly add in flour mixture and mix just until combined.
Remove from oven and gently press down on marshmallows to flatten slightly. Cool on pan several minutes then transfer to cookies to wire racks and set wire racks over a baking sheets.
For the icing: Sift powdered sugar and cocoa into a medium mixing bowl, set aside.
Heat butter and cream over medium heat and cook, stirring frequently until butter has melted and mixture reaches a simmer. Remove from heat, pour in powdered sugar and cocoa powder and whisk until smooth.
Mix in peppermint extract. If mixture is too thick thin it with a little hot water, if it's too thin thicken with a little more sifted powdered sugar.
Immediately spoon icing over cookies (or alternately drizzle from a resealable bag with a cut corner) and sprinkle each cookie with crushed peppermint after adding icing because the icing will start to set quickly.
I just can't get enough of that salty-sweet combination and I love the finishing touch of an added layer of chocolate...and sprinkles because you just can't go wrong with sprinkles.
Just like any other rice krispie treat these are quick and easy to make. The other great thing about these is that they make for a simple treat to make for any holiday. They are a fun change from your normal Friendsgiving and Thanksgiving dinner treats.
We all love a slice of pie but on thanksgiving I like to have two desserts so these are the perfect second addition to finish off the meal.
Or better yet, serve these for Friendsgiving and pie on Thanksgiving! These are also a great treat to give for the holidays because everyone will already be getting an overload of cookies so these are perfect to switch things up a bit.
Rice Krispies Treats get a total upgrade here with the addition of salt pretzels and kettle chips to balance out the sweetness then they're finished with a decadent layer of chocolate! A treat everyone will love!
Remove from heat. Pour rice krispies cereal mixture into marshmallow mixture and gently stir and toss with a spatula to evenly coat. Pour mixture into prepared baking dish.
No matter how old you are rice krispie treats never get old! I still make them all the time for a quick treat and I’ll never get sick of them.
Here I’ve made them into a fall-inspired treat that both young and old alike will love! Whenever I take them to a Halloween party or Thanksgiving dinner they disappear in no time (ugh and I can never stop at just one).
I’ve mentioned in the recipe if you are making them for adults I’d use the marshmallow fondant, then for kids use the green airheads as pictured.
]]>I made these three times to get the perfect cookie base and I think it's safe to say I couldn't make them any better!
I learned a few things along the way, like for instance if you let the cookie batter rest for 5 minute before baking the cookies shouldn't collapse as much, if at all, in the center once removed from the oven (so they had a better structure. If they do fall a little it's not big deal at all because they are covered with marshmallows) and they didn't seem quite as greasy.
Still perfectly buttery and moist but the little bit of resting time I think allows for the graham cracker to absorb some of the butter before they bake so it doesn't start out an over-buttery batter (if that makes sense).
