Viral TikTok Inspired Baked Oats Improved

Baked oats have been around for a years and became very popular from a TikTok recipe.

The difference between these and baked oatmeal is that the ingredients for baked oats are all pulverized in a blender leaving the oats ground up fine, and with baked oatmeal the oatmeal is left whole and everything is just stirred together in a mixing bowl.

Though the ingredients between the two are very similar their textures are quite different. These are more muffin-like while baked oatmeal is more like a chewy oat breakfast casserole. Both are so delicious just unique in their own way.

I tried the viral version of baked oats but felt it was a bit spongy so modified it based off what I thought would offer a better texture (less egg and banana, adding liquid, etc). And I couldn't resist adding a dab of butter, feel free to add two if you'd like for richer oats.

Our Favorite Apple Salad Recipe!

Who doesn't love a salad that includes fresh seasonal ingredients? Many of us are baking with those delicious seasonal fall apples (making apple crisp, apple pie or apple cobbler) but those juicy apples are also such great addition to savory recipes (like this autumn sheet pan chicken dinner) and side salads like this.

Apples are the crowing star of the show in this salad and they are highlighted beautifully by the other ingredients like the tangy feta and rich smoky bacon. Bacon makes everything better though right?

This salad is simple enough to be an addition to weeknight meal but it's also delicious enough to be served at a holiday gathering or a weekend party.

If you want to make it a main dish just add some chopped rotisserie chicken to it for more protein or consider tossing in a grain like farro, barley or even seedy tri color quinoa.

Easy Refrigerator Pickled Beets

Pickled beets used to be one of those things that I cringed at growing up but now I absolutely love them! Maybe that's because the homemade version completely changed my opinion on them.

I make these several times every summer when I get fresh beets from my brothers garden. Pickled beets really don't get any better than this!

These are super fresh, perfectly simple without other flavors to hide their unique flavor, and you wouldn't believe how easy they are to make.

These are a great option if you, like me, aren't familiar with canning things yourself (to make them shelf stable). Fresh Made Almond Milk

Making this DIY almond milk is easily the superior version of almond milks. It actually tastes quite different from store-bought versions because it's just so good! I was completely surprised myself the first time I made it.

This homemade variations doesn't included additives such as thickeners like added guar or gellan gums (which to some can cause stomach upset), and the almond flavor here just comes from the almonds not added flavor. I would suspect there's a greater ratio of almonds used in this almond milk vs. factory processed as well (though I have no way of proving this, I'm giving that judgment based on taste alone).

Isn't making things from scratch and that bit of self sufficiency involved with it just such a gratifying process (and we tend to appreciate it more too right)? Even when it's this easy, totaling about 5 minutes hands on prep time.

It's also a handy know-how for when you may run out of store-bought milk of any kind but you're wanting that bowl of muesli or cereal with it.

You'll just need a few special tools including a nut bag or a clean tea towel for straining, and a high speed blender to finely pulverize the soaked almonds.

Uses and Variations

Once you've completed the simple process there are countless uses for it. You can drink as is, serve with cereal or oatmeal, add to soups, makes sauces such as curries, or create desserts along the lines of pudding and so forth.

You can even change up the flavor of the almond milk. Making it taste horchata-like by blending with a cinnamon stick, turning it into chocolate almond milk or hot chocolate, or giving it a spiced flavor and sunny glow by making it golden milk (turmeric milk). And don't forget the fruity options like strawberry milk by adding a strained homemade strawberry sauce.

I'd say start with the basic recipe below to taste it's pure goodness, then explore all the other flavor options and uses from there.

This is my idea of the best pumpkin soup! It's like autumn in a bowl and it has such an inviting flavor. Plus, it couldn't be easier.

Our Go-To Blueberry Muffins!

Is a blueberry muffin healthy?  While the obvious answer is no a traditional blueberry muffin is definitely not healthy, we can however make a few simple modifications to make them quite a bit healthier.

And sure I have a not-so-healthy sugar packed blueberry muffin we love and enjoy sometimes but this recipe below is something I feel better about serving my family more often.  These have actually been one of our go-to breakfasts before school for quite some time.

It's something we can take on the go, they are such a tasty morning treat, and it's so convenient that they can be made ahead.

For the kids we usually just pair them with milk and a hard boiled egg for another make ahead option (we aren't morning people and appreciate those few extra minutes of sleep). And if you like them warm you can heat in the microwave briefly.

These blueberry muffins freeze well for several months (though you'll probably have them polished off much sooner), and you don't even need a mixer to make them!

They have a soft and moist crumb, plenty of blueberry flavor, and they are sweetened just enough.

If you are looking for a smarter way to enjoy a muffin without all the refined sugars and unhealthy fats I highly recommend trying these. You may likely agree muffins can still be delicious without all that extra stuff.

Slow Cooker Spiral Sliced Ham

One of best ways to cook a (pre-cooked) ham in a crock pot is to cook it on low, covered with a simple glaze to upgrade it, just until it's heated through.

Here a savory smoked ham roast is generously coated with the perfect autumn inspired glaze. It includes apple juice concentrate, maple syrup, brown sugar and mustard. It lightly sweetens the ham and gives it a welcome extra layer of flavor.

At the end of cooking, you can choose the thickness preferred for the glaze. It will be very runny (more like a broth) so you can choose to thicken those juices from the crockpot with some cornstarch, or just keep it as is and spoon some over the sliced ham for added moisture and seasoning.

This is a recipe that is easy to modify to include other flavors you like or use up ingredients you may have on hand. Here are some ideas:

Possible Substitutes

  • Try it with pineapple juice concentrate in place of apple juice concentrate.
  • Switch out the spice. We went with ginger because I like it with this blend of ingredients but cloves or even cinnamon can be added.
  • You could even use fresh ginger here in place of dried (add a few teaspoons).
  • If you don't have real maple syrup try it with honey.
  • Dijon Mustard will work for spicy brown mustard. Add more mustard if you want more tangy flavor.
