Winter Fruit Salad Recipe

Typically we think of fruit salads as a summer side dish but there's still an abundance of fruit in season during winter so why not take advantage of that and make a healthy winter fruit salad?

I first shared this recipe eight years ago and we've made it several times each year since. It's so good it almost passes as a tempting dessert!

This is a great dish to add to a holiday menu because there are often lots of heavy sides served but this is a light, refreshing and nutritious option to help balance those out a bit.

You'll find this inviting fruit salad is so easy to make and it adds so much festive natural color to your table.

Just keep in mind the most important thing about a fruit salad is the quality of the fruit. You want the fruit to have a sweet ripe flavor and firm enough texture that it won't get mushy.

From there the honey and lemon will just balance and highlight all of it's natural, fresh fruity goodness.

The Best Fruit Salad Recipe

I first shared this recipe 5 years ago but it's one of my favorite recipes, so for new readers or in case you missed it I thought it needs to be revisited. Plus I thought this exactly what mom's want on Mother's Day for brunch paired with waffles, crepes or Eggs Benedict!

I know Skittles are good, but I'm thinking this has got to be the right way to get a taste of the rainbow. This blend of colorful fruits all come together to make a gorgeous rainbow, made with healthy ingredients!

Kids will love this this fruit salad and it is an easy way to get them to eat plenty of fruit at once.

A Fruit Salad Dressing without Cream or Pudding

Fruit Salsa with Baked Cinnamon Tortilla Chips

You know I'm all about the dips and salsas, especially when they involve something sweet. I'm totally in love!

I've always been a big fan of baked or fried sugar and cinnamon chips (I make these baked ones all the time), but I've actually never paired them with fruit salsa until now. But let me tell you, it is a match meant to be!

I adapted this recipe from Carrian and Kade Cheney's new cookbook, Our Sweet Basil Kitchen.

This is a wonderful cookbook filled with pretty pictures and more than 100 family-friendly recipes. There are so many recipes I cannot wait to try!

Fruit Salsa Ingredients

For the fresh fruit salsa, you'll need:

  • Peach or nectarine
  • Mango
  • Kiwis
  • Strawberries
  • Strawberry jam
  • Fresh lemon juice

Cinnamon Chips Ingredients

The cinnamon sugar chips are so easy to make! You'll need:

  • Granulated sugar
  • Cinnamon
  • Flour tortillas
  • Butter

How to Make Fruit Salsa and Cinnamon Chips

  • To make the fruit salsa, dice the fruit into bite-sized pieces and add to a bowl.
  • Toss with the strawberry jam and lemon juice.
  • To make the cinnamon tortilla chips, first stir together the cinnamon and sugar.
  • Brush the flour tortillas with butter, then dust with homemade cinnamon sugar.
  • Cut the tortillas into wedges and bake until golden brown.

Can I Use Corn Tortillas Instead of Flour?

Corn tortillas would taste quite different and have a different texture and mouthfeel, I recommend sticking with flour tortillas for this recipe.

Does Fruit Salsa Stay Fresh for Long?

This fresh fruit salsa is best enjoyed within two hours of making it. The fruit will release more and more liquid the longer it sits, so I wouldn't recommend making this salsa too far in advance.

Can I Add Different Fruits to This Salsa?

Of course! You can use any fruits you want, although I personally think softer fruits are the best in this salsa (berries, stone fruits, etc).

Tips for the Best Fruit Salsa and Cinnamon Chips

  • The cinnamon chips won't be fully crisp when you take them out of the oven. They need a few minutes to cool on the baking sheet to crisp up properly.
  • Give this fruit salsa a good stir before serving it, as the fruit juices will collect at the bottom of the bowl.
  • Fresh, in-season fruit is best for this recipe. I don't recommend using frozen fruit here (too runny and mushy).

Fruit Salsa with Baked Cinnamon Sugar Chips

Soon to be one of your favorite ways to use up fruit! This fruit salsa such an easy treat to make and people of all ages love it! It's loaded with fresh fruit and those cinnamon sugar chips are addictive!

  • 1 peach or nectarine (, peeled and diced)
  • 1 mango (, peeled, cored and diced)
  • 3 kiwis (, peeled and diced)
  • 1 (16 oz) pkg. strawberries, hulled and diced
  • 1 1/2 tsp fresh lemon juice
  • 2 Tbsp strawberry jam

Cinnamon Sugar Chips

  • 1/4 cup granulated sugar
  • 1 tsp cinnamon
  • 6 6- inch flour tortillas
  • 2 Tbsp butter (, melted)
  1. Preheat oven prepare baking sheet: Preheat oven to 400 degrees. Spray an 18 by 13-inch baking sheet with non-stick cooking spray (or line with a silicone liner or parchment paper), set aside.

  2. Toss fruit with lemon and jam: For the fruit salsa in a large mixing bowl toss together peach, mango, kiwi, strawberries, lemon juice and strawberry jam. Chill salsa (serve salsa within 2 hours).

  3. Butter tortillas, dust with cinnamon sugar: In a small bowl mix together sugar and cinnamon. Brush both sides of the tortillas lightly with melted butter. Sprinkle each side of tortillas evenly with cinnamon sugar mixture*. 

  4. Cut into wedges: Cut tortillas into 6 wedges, similar to cutting a pizza**.

  5. Bake: Transfer to prepared baking sheet in a single layer (they'll likely have to overlap slightly in places). Bake in preheated oven about 10 - 12 minutes, turning chips once halfway through baking***. 

  6. Let chips cool then serve with fruit salsa.
  1.  I recommend laying them over a cutting board when doing this. Use up all of the cinnamon sugar mixture.
  2.  To cut them, I like to make 2 stacks of 3 tortillas each then cut through all of them at once. I first cut them into halves then from there each half into 3 wedges). 
  3. Chips won't be fully crisp throughout by the end, but once cool they should crisp up fully.

Homemade Watermelon Popsicles

I absolutely love these layered Watermelon Popsicles, as did my kids! They are made with mostly fruit, a few chocolate chips and then the white portion is coconut milk. So as long as you use good, ripe fruit the flavors will be utterly delicious and irresistibly refreshing. If you don't have enough ripe watermelon, or your watermelon puree isn't as pink as you want, you can also add strawberries or raspberries. I also like to add fresh mint leaves or fresh lime juice to the watermelon—the best flavor combination!

Watermelon popsicles

I made this watermelon popsicle recipe a few times trying to find the best way to keep the layers from blending but you'll probably always find just a little bit even if you are keeping the sides very clean.

Another thing that will likely be hard to avoid is that some will be more "water-logged" than others (as in some of them will have a little separation on the bottom because of the high concentration of water in watermelon) leaving a lighter portion on top of a few of them, but they will still taste just as delicious - it's just watermelon juice.

If you'd like you could also cut up little raisins to use for the seeds but I always love a little chocolate if you don't mind the added sugar. Honey, agave, or maple syrup can also help with the sweetness if you don't want to add refined sugar.

Light coconut milk would probably work fine too, it won't be quite as white and not quite as creamy but should still be delicious. Sticking with coconut milk makes these a good vegan dessert—but if you're ok with dairy you can also use Greek yogurt.

I've been intending on posting a fruit pizza recipe for the last two summers (the full pizza sized kind). I'm just now getting around to it, but I decided to just do the individual portions instead. It takes out the cutting step (which equals less mess) plus they seem easier to decorate this way.

We had a combined family birthday party this past weekend (two of my brothers and I share a birthday week, all within 6 days of each other), and since everyone was bringing cakes I decided to add some cookies in there.

You get this soft sugar cookie that just melts away in your mouth, then it's topped with this most amazing, freshly lemon flavored cream cheese frosting, and they are finished off with plenty of fresh fruit.

I'm sure I will be making these incredibly delicious cookies many more times this summer, especially with all the fresh fruit in season. It's one of my favorite parts of summer, that abundance of fresh fruit.

Mini Fruit Pizzas with Lemon Cream Cheese Frosting | Cooking Classy

Mini Fruit Pizzas with Lemon Cream Cheese Frosting

The perfect summer treat! Soft melt-in-your-mouth cookies are topped with a bright frosting and lots of fresh fruit.

  • 1 1/2 cups all-purpose flour*
  • 1 1/2 cups cake flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter (, softened)
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • Sliced fresh fruit (, for topping**)

Lemon Cream Cheese Frosting

  • 8 oz cream cheese (, softened)
  • 1/2 cup unsalted butter (, softened)
  • 2 tsp lemon zest
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • 1/4 tsp lemon extract
  • 1 1/2 cups powdered sugar
  1. In a mixing bowl, whisk together flour, then sift in cake flour and add baking powder and salt. Whisk 20 seconds, set aside.
  2. In the bowl of an electric stand mixer, fitted with the paddle attachment, whip together butter and sugar until creamy and slightly pale and fluffy, about 1 - 2 minutes. Mix in eggs one at a time, then blend in vanilla. With mixer set on low speed, slowly add in dry ingredients and mix until combined. Divide dough into two equal portions, shape each into a disk and cover with plastic wrap. Chill 3 hours or up to overnight.
  3. Preheat oven to 375 degrees. Dust a clean working surface with a fair amount of flour, remove one dough from refrigerator, unwrap and place on floured surface. Sprinkle top with flour and roll to 3/8-inch thickness (right between 1/2-inch and 1/4-inch). Cut into 2 1/2-inch rounds then transfer to a Silpat or parchment paper lined baking sheet. Bake in preheated oven 7 - 9 minutes (cookies won't become golden so don't over-bake. You want them slightly set but they should still make an indentation when touched). Remove from oven and allow to cool on baking sheet 2 minutes, then transfer to a wire rack to cool completely. Repeat process with remaining dough.
  4. Once cookies are cool, frost with Lemon Cream Cheese Frosting. Decorate with diced fruit just before serving.
  5. For the Lemon Cream Cheese Frosting:
  6. In the bowl of an electric stand mixer, fitted with the paddle attachment, whip together butter, cream cheese and lemon zest until smooth and fluffy. Mix in lemon juice, vanilla, and lemon extract. Add powdered sugar and whip mixture several minutes longer until fluffy.
  7. *Scoop and level each flour, vs spoon an level. All of my recipes use the scoop and level method but I thought I'd throw it out there because it's very important for this recipe so your dough isn't sticky. If you live in high humidity you may even want to add in an additional 1/4 cup of flour.
  8. **I recommend using berries (strawberries, raspberries, blueberries, blackberries, huckleberries, etc), kiwi, pineapple, peaches or mangos and dicing fruit into small pieces (except kiwis - slice those).
