Now that summer has arrived my family is obsessed with these strawberry milkshakes!

They couldn't be quicker and easier to make, they need just a few ingredients, and they are a shortcut semi-homemade dessert (since they use store-bought ice cream).

Not to mention they are great way to use up seasonal strawberries and you'll find them to be one of the most refreshing treats on a hot sunny day.

Simply put these are completely and utterly delicious in every way!

Possible Variations

You can make them with a variety of different ice creams or fruit, or even try them with different jam.

  • Ice Cream Flavors: Try them with cheesecake ice cream, blueberry, raspberry or vanilla ice cream.
  • Fruit: Make this shake with a triple berry blend (strawberries, raspberries and blueberries), or use just blueberries, or even try them with something like cherries or mangos.
  • Milk/cream substitute: Instead of using both milk and cream use 3/4 cup half and half.
  • Healthier milkshake: For a healthier option try using a no sugar ice cream, and use low fat milk or a low calorie dairy free milk like almond milk in place of regular milk and cream.

Easy Jam Thumbprint Cookies

Thumbprint cookies are a simple, richly buttery cookie much like shortbread cookies. They are however even more tender (like butter cookies) thanks to the egg yolks in the dough and also the jam which slightly soaks in and creates more softness.

They have a unique texture differing from most other cookies because of this.

You can use just about any flavor of jam. The most commonly used are raspberry jam, strawberry, apricot, or peach. You can't go wrong with blueberry, blackberry or fig either.

I think you'll appreciate the fact that they use so few ingredients (only six plus salt) and they are fun and easy to make. Though a small and humble cookie they are also such a pretty cookie with a purely delicious taste!

These are a delightful treat that can be adapted to include other flavors, other fillings and even can be rolled in various coatings before baking (see ideas below).

A simple cookie that proves old fashioned favorites are often the best!

A Favorite Holiday Cookie!

If you haven't made Linzer cookies before I'd say it's due time! They are reminiscent of the Knots Berry Farm cookies / jammy Pepperidge Farm cookies but easily a thousand times better because they are homemade and fresh. Plus they have much more flavor.

They are similar to thumbprint cookies, butter cookies and shortbread. But they have the addition of preserves sandwiched between the center and finely ground nuts in the dough (here we go the easier route with pre-ground almond flour).

These are such a fun cookie to make and they are great for parties and gifting (just be mindful and careful to not give to those with nut allergies).

You can use various shapes of cookie cutters here. I recommend rounds, squares, stars or hearts, and you'll just need to have a smaller cookie cutter to cut the mini shape from their centers.

Once you make these decadent sandwich cookies quickly hide them away. They'll disappear in no time if you don't!

No one can resist the layers of flavor, that nutty goodness, the perfect blend of textures and that tempting jammy goodness? It's one dangerously delicious cookie!

Fruit Salsa with Baked Cinnamon Tortilla Chips

You know I'm all about the dips and salsas, especially when they involve something sweet. I'm totally in love!

I've always been a big fan of baked or fried sugar and cinnamon chips (I make these baked ones all the time), but I've actually never paired them with fruit salsa until now. But let me tell you, it is a match meant to be!

I adapted this recipe from Carrian and Kade Cheney's new cookbook, Our Sweet Basil Kitchen.

This is a wonderful cookbook filled with pretty pictures and more than 100 family-friendly recipes. There are so many recipes I cannot wait to try!

Fruit Salsa Ingredients

For the fresh fruit salsa, you'll need:

  • Peach or nectarine
  • Mango
  • Kiwis
  • Strawberries
  • Strawberry jam
  • Fresh lemon juice

Cinnamon Chips Ingredients

The cinnamon sugar chips are so easy to make! You'll need:

  • Granulated sugar
  • Cinnamon
  • Flour tortillas
  • Butter

How to Make Fruit Salsa and Cinnamon Chips

  • To make the fruit salsa, dice the fruit into bite-sized pieces and add to a bowl.
  • Toss with the strawberry jam and lemon juice.
  • To make the cinnamon tortilla chips, first stir together the cinnamon and sugar.
  • Brush the flour tortillas with butter, then dust with homemade cinnamon sugar.
  • Cut the tortillas into wedges and bake until golden brown.

Can I Use Corn Tortillas Instead of Flour?

Corn tortillas would taste quite different and have a different texture and mouthfeel, I recommend sticking with flour tortillas for this recipe.

Does Fruit Salsa Stay Fresh for Long?

This fresh fruit salsa is best enjoyed within two hours of making it. The fruit will release more and more liquid the longer it sits, so I wouldn't recommend making this salsa too far in advance.

Can I Add Different Fruits to This Salsa?

Of course! You can use any fruits you want, although I personally think softer fruits are the best in this salsa (berries, stone fruits, etc).

Tips for the Best Fruit Salsa and Cinnamon Chips

  • The cinnamon chips won't be fully crisp when you take them out of the oven. They need a few minutes to cool on the baking sheet to crisp up properly.
  • Give this fruit salsa a good stir before serving it, as the fruit juices will collect at the bottom of the bowl.
  • Fresh, in-season fruit is best for this recipe. I don't recommend using frozen fruit here (too runny and mushy).

Fruit Salsa with Baked Cinnamon Sugar Chips

Soon to be one of your favorite ways to use up fruit! This fruit salsa such an easy treat to make and people of all ages love it! It's loaded with fresh fruit and those cinnamon sugar chips are addictive!

  • 1 peach or nectarine (, peeled and diced)
  • 1 mango (, peeled, cored and diced)
  • 3 kiwis (, peeled and diced)
  • 1 (16 oz) pkg. strawberries, hulled and diced
  • 1 1/2 tsp fresh lemon juice
  • 2 Tbsp strawberry jam

Cinnamon Sugar Chips

  • 1/4 cup granulated sugar
  • 1 tsp cinnamon
  • 6 6- inch flour tortillas
  • 2 Tbsp butter (, melted)
  1. Preheat oven prepare baking sheet: Preheat oven to 400 degrees. Spray an 18 by 13-inch baking sheet with non-stick cooking spray (or line with a silicone liner or parchment paper), set aside.

  2. Toss fruit with lemon and jam: For the fruit salsa in a large mixing bowl toss together peach, mango, kiwi, strawberries, lemon juice and strawberry jam. Chill salsa (serve salsa within 2 hours).

  3. Butter tortillas, dust with cinnamon sugar: In a small bowl mix together sugar and cinnamon. Brush both sides of the tortillas lightly with melted butter. Sprinkle each side of tortillas evenly with cinnamon sugar mixture*. 

  4. Cut into wedges: Cut tortillas into 6 wedges, similar to cutting a pizza**.

  5. Bake: Transfer to prepared baking sheet in a single layer (they'll likely have to overlap slightly in places). Bake in preheated oven about 10 - 12 minutes, turning chips once halfway through baking***. 

  6. Let chips cool then serve with fruit salsa.
  1.  I recommend laying them over a cutting board when doing this. Use up all of the cinnamon sugar mixture.
  2.  To cut them, I like to make 2 stacks of 3 tortillas each then cut through all of them at once. I first cut them into halves then from there each half into 3 wedges). 
  3. Chips won't be fully crisp throughout by the end, but once cool they should crisp up fully.

They do require more work and time than your traditional snowball cookie - you'll have to roll out twice as many cookie balls (since you need halves) then you have to make indentations in each of them, fill them with a little jam and then bring them together and seal them.

So yes they are more of an intermediate cookie, but trust me, they are worth the effort!

Everyone was dying over how good these were! They have all the same flavors as another favorite Christmas cookie of mine, these Raspberry Almond Thumbprint Cookies, but here you get a surprise jam filling inside and they dough has little tiny bits of almond pieces, plus everyone will love that sweet powdered sugar coating.

You don't get a huge batch of cookies out of this, but rather about cooling rack full of little delicacies.

Keep in mind you want to fully seal the cookies once you add the jam and bring the two halves together so that delicious filling doesn't just leak out. Then another thing to note is that these cookies are pretty fragile so handle them care when assembling them and once they've baked up.

And I did think they are the very best the day they are baked, the jam lightly softens them the following days (which my mom actually liked) but if you like that extra tender, melt-in-your-mouth bite then serve them up the day you make them.

Raspberry Almond Snowball Cookies (Jam Stuffed Snowballs)

Melt-in-your-mouth snowball cookies with a sweet, surprising jam center! And everyone will love that raspberry almond flavor combo. These will be the star of the show on a cookie tray! 

  • 2 cups (248g) all-purpose flour ((scoop and level to measure))
  • 1/2 tsp salt
  • 3/4 cup (76g) sliced almonds
  • 1 cup (113g) unsalted butter, (softened)
  • 1/2 cup (60g) powdered sugar
  • 1/2 tsp almond extract
  • 6 Tbsp (115g) seedless raspberry jam
  • 1 1/2 cups (170g) powdered sugar
  1. In a mixing bowl whisk together flour and salt, set aside. Add almonds to a food processor and process until finely ground to tiny bits, set aside.
  2. In the bowl of an electric stand mixer set with the paddle attachment cream together butter and 1/2 cup powdered sugar until combined and smooth. Mix in almond extract. 
  3. Slowly add in flour mixture and mix just until combined. Mix in ground almonds, folding with a spatula as needed to gather them from the bottom of the mixing bowl (see notes).
  4. Scoop dough out 1/2 (half) tablespoon at a time. Shape the 1/2 Tbsp dough into a ball then make a fairly deep indention (large enough to fit the jam) with your finger or thumb. Add 1/2 tsp of the jam. 
  5. Then scoop out another 1/2 tablespoon of cookie dough and shape into a ball. Make an indentation in that piece then gently place that indented dough ball over the jam filled dough ball, this will make one round ball. Gently bring some of the dough down on the sides to seal the dough ball. 

  6. Transfer to a plate. Repeat with remaining dough. Leave space between dough balls on plates so they chill evenly.
  7. Transfer dough balls to refrigerator and chill 1 hour 30 minutes. Preheat oven to 375 degrees during last 15 minutes of chilling. Transfer cookies to a baking sheet spacing them 2-inches apart (leave remaining dough balls that don't fit on baking sheet chilled). 
  8. Bake in preheated oven until set, about 11 - 13 minutes (careful not to over-bake or they can crack and jam may seep out). 

  9. Remove from oven and allow to cool several minutes, then while they are still warm pour remaining 1 1/2 cups powdered sugar into a small mixing bowl and carefully roll cookies in powdered sugar to give them a light coating. 
  10. Transfer them to a wire rack to cool completely then roll once more in powdered sugar to give them a thicker coating.
  • At this point dough should be soft and easy to work with, it should not be sticky and should not be dry. If it is sticky add a few more tablespoons flour.
  • If it is dry you can mix in a tablespoon of milk. The consistency of the dough is important here because you don't want the dough cracking a lot when you do the indentation in the dough balls - because the jam will just seep out of the cracks (one little cracks is fine you can pinch it together). And you don't want it sticky or it will be too hard to work with.

Thumbprint Cookies Pineapple Jam and Coconut!

So I didn't make it anywhere tropical this summer so instead I brought the taste of the tropics home with these utterly delicious, melt-in-your-mouth Pineapple Coconut Thumbprint Cookies!

I'm obessed with thumbprint cookies maybe these will complete my collection, but then again maybe not :). I absolutely love this summery twist on thumbprints!

It took a few batches to get them just right but after a little tweaking each time I got them right where I want them.

They are perfectly coconuty, deliciously buttery, they have just the right texture, and with the help of a little lemon juice and lemon zest you get a flavorful pineapple jam that makes for the perfect pairing with the coconut.

Peanut Butter and Jelly Cookies

PB&J in cookie form? Yes please! My kids and I love peanut butter and jam sandwiches so of course we were excited to try these PB&J Thumbprint Cookies. My four year old saw them and said "Wow! Those look good!" Then she offered to help me finish making them. I gave her a plateful to fill and she thought it was so fun to load them up with different flavors of jam.

Not only do these cookies look colorful and scrumptious but they taste completely irresistible! They are just like those delicious peanut butter filled sandwiches laden with a berry jam but these are in sweet cookie form! They have that deliciously crisp exterior you find in your traditional thumbprint cookie and each bite just melts away in your mouth.

My personal favorite jam with these is the Smucker's Low-Sugar Strawberry Jam (not only do I love it's bold strawberry flavor but I also love it's vibrant red color. Its the red jam in the cookies but not in the picture of the jams. My jar was about empty because we eat it so often), but any flavor will do. Just use your favorite. Smucker’s Fruit Spreads are my go-to, because I know I can count on their authentic tastes and variety.

The great things about these cookies is that they are a cookie both young and old alike will love! Who could resist this jam filled peanut buttery goodness? Not me! They're the perfect after school treat from the whole family!
