This simple avocado salsa is basically guacamole mingled with salsa or pico de gallo. It's a dip that has the flavors of guacamole but more of a texture similar to a chunky salsa.

It's brimming with nutritious ingredients, and you'll love it's lively flavor. Plus who can resit that tempting blend of textures? Among them a soft bite, bits of crispness throughout, plenty creaminess, and with crunchy flakey chips a truly perfect pairing.

It's a fine-chop dunk-able chip dip, or you can use it as a topping over cooked protein such as pan seared salmon, black bean burgers, or grilled chicken. Another option of course is to heavily layer it over your favorite Mexican food - things like taco salad, chicken street tacos, fajitas, or even add a few spoonfuls to a bowlful of tortilla soup.

Chili Con Carne

Chili con carne is a robust and rich chili made with beef roast that includes deeply flavored Mexican chilies and spices all simmered together in a stew-like dish. This is a Texas style chili and it's made of mostly beef and chili sauce without lots of added fillers.

It uses a generous amount of browned beef chuck chunks rather than ground hamburger and this really builds up the meaty flavor. Whole dried chilies are used in place of pre-ground store-bought chili powder, and those chilies are toasted in a skillet then soaked in liquid and pureed in a blender to build the base of this hearty chili.

The chili is simmered low and slow on the stovetop for well harmonized depth of flavor and to tenderize the beef.

It's an impressive made from scratch chili that may seem intimidating at first but once you try it you'll see it's easier to make than you'd think.

It's also a tasty change from the original style chili and you may find tasters to love it even more, especially meat lovers! Plus it could just win your next chili cook off!

A Summery Corn Salsa Recipe

Corn salsa that's much better than Chipotle! It's a healthy dip that also doubles well as a side dish.

Fresh corn and bell pepper are fire roasted over a hot grill or gas stove flame for a beautiful smokey char, then it's tossed with a colorful plethora of other complementary fresh Mexican-style ingredients.

It has such a tantalizing blend of flavors that's is makes the perfect chip dip, or its delicious served over salmon, shrimp, chicken or beef (we love the salmon option).

Plus it's a versatile salsa with lots of ways to switch things up (see ideas below).

It's best made in season when you can get prime sweet yellow corn, but during the colder months try it with frozen corn too.

Creamy Chicken and Corn Chowder

This is the coziest of soups! It’s loaded to the max with delicious, fresh ingredients and it’s that creamy broth and salty bacon that will keep you craving more.

It has a handy shortcut of pre-cooked chicken, which can be from a rotisserie chicken or leftover cooked chicken.

From there it’s just a bit of chopping, sautéing and allowing enough time on the stovetop to simmer to perfection.

Serve it with cornbread or 1-hour dinner rolls for an ideally comforting meal.

These are also known as one of the ultimate game day or party foods! They have that addictive kick of heat, immense flavor throughout and all the best textures coming from each layer. Plus they are easy to make!

I'm known to quickly finish off half the pan myself. These things are irresistibly addictive! And one of my favorite ways to eat my vegetables (or fruit if you want to get technical).

It just makes sense that they are so supremely delicious. You get that spicy element that always excites the tastebuds, along with a multi-dimensional layer of savory cheese flavor, a light flaky crunch from both the panko and the bacon, and some extra freshness coming from the herbs.

All the best things bundled into one small, yet completely satisfying stuffed jalapeno chili pepper. I think we ought to just make them a weekend tradition, don't you?

What is Ceviche?

Ceviche is a healthy Peruvian dish that is usually served as an appetizer. It's generally made from raw fresh fish or shrimp, that's marinated in lemon and/or lime citrus juices. The acidity in the citrus cures the fish causing it to denature the proteins and become firm and opaque while absorbing flavor.

After the seafood has sort of cooked in a way other ingredients are tossed in such as onions, cilantro, peppers and tomatoes.

It's such a vibrant dish that's perfect for weekends or parties. Truly a recipe seafood lovers will instantly fall in love with, especially when you pair it with freshly fried or baked, homemade tortilla chips!

And for those that love heat, finish it with hot sauce.

Using Cooked or Raw Shrimp

This version actually cooks the shrimp first in boiling water (to reduce any risk of pathogens and food borne illness, the safest option and definitely recommend for pregnant women, children, the elderly and anyone with a compromised immune system).

But if you aren't worried about it, for the most authentic version you can skip pre-cooking the shrimp and just soak and "cook" in the marinade instead.

For raw shrimp version: Soak the raw shrimp in the 1/2 cup lemon juice and 1/2 cup lime juice for 30 - 60 minutes in the fridge (or until shrimp are opaque), then add tomatoes, onions, cilantro, jalapeno, salt and pepper and marinate 30 minutes longer. Then finish with avocado and cucumber.

What Is Salsa Verde?

Salsa Verde originated from Mexico and is a green salsa, usually tomatillo based (unlike a red tomato based salsa). It is usually used as a chip dip or on tacos (I also love it on enchiladas, fajitas, tostadas and chimichangas!)

This is a roasted version of green salsa - nothing overly roasted or too far blackened for my liking, just a fair char on two sides. Then just add everything to a food processor a give it a few quick blitzes, easy as can be.

I definitely prefer this roasting method over the raw versions or boiled versions. This is my idea of the BEST salsa verde!

It's one of my go-to snacks and toppings, try it and and you'll see why!
