A family favorite made with toasted English muffins, creamy herbed eggs, flavorful cheddar, and thin cut deli ham folded into layers to perfectly fit. Such a tasty way to start the day!

Stack of breakfast sandwiches.

A Simple Homemade Breakfast Sandwich

This is a classic breakfast sandwich with a few upgrades (hello herbs and cream!) plus a few simple swaps to make them faster (using stovetop scrambled eggs and pre-cooked meat like deli ham).

They are a classic morning comfort food and make a super satisfying lazy Saturday morning breakfast. They don't require any special cooking skill, and they are one of those breakfasts that everyone can agree on.

Plus I've shared lots of other options to switch them up including various filling ideas and cooking methods because this is the ever-so-versatile breakfast sandwich after all.

The key to the recipe is just that you don't walk away while they are toasting under the broiler and forget about them. I think we all have at least one memory of doing that to that blackened piece of garlic bread or what not. These are much too good to be wasted to charring.

Chicken Cordon Bleu https://www.cookingclassy.com/chicken-cordon-bleu/ https://www.cookingclassy.com/chicken-cordon-bleu/#comments Sun, 18 Dec 2022 05:20:53 +0000 https://www.cookingclassy.com/?p=65870 Perfect Chicken Cordon Bleu - made with tender chicken breasts, flavorful black forest ham, tangy Swiss cheese, and a crisp panko finish. And to polish it off it's highlighted with a creamy garlicky mustard sauce to finish. It may be old fashioned but it's still absolutely delicious!

Chicken Cordon Bleu shown sliced in half with sauce on top. Green beans shown to the side.

What is Chicken Cordon Bleu?

Cordon Bleu is a dish with Swiss origin that is a derivative of schnitzel.

Chicken cordon bleu specifically is made of chicken that has been pounded thin, layered with ham slices, and topped with Swiss cheese. They layers are rolled snug or folded over, after which it's breaded with flour, egg and dried breadcrumbs. And to cook it's and either pan fried or baked.

In the United States it was a dish that was very popular between the 60's and 70's. In my experience as a kid growing up in the 90's I commonly remember chicken cordon bleu casserole which was a simplified version (which wasn't quite as good, but mimicked the same flavors).

You can serve it whole (note in this recipe though you'll only get four servings if doing so), or you can slice and layer them on a platter domino style. I prefer the later as you'll get more servings and presentation is eye catching with those pretty swirls.

And the creamy honey mustard sauce, which I believe is a staple to the dish, should be poured over each individual servings right before it's served (so the breading doesn't get soft, because that crispy crunch is a crowning finish!).

This dish is perfect for entertaining or for the holidays. It may be a little bit of extra effort but very well worth it!

Honey Baked Ham https://www.cookingclassy.com/honey-glazed-ham/ https://www.cookingclassy.com/honey-glazed-ham/#comments Fri, 16 Dec 2022 01:12:18 +0000 https://www.cookingclassy.com/?p=35703 A Honey Baked Ham recipe made at home for a fraction of the price you'd pay at a store with a flavor that's just as delicious! The salty, hickory smoke flavor of the ham is perfectly balanced with a sweet and sticky honey and brown sugar glaze, which also has delicious hints of warm spices to compliment it.

Honey Baked Ham

Honey Baked Ham Recipe

A go-to method for spiral sliced ham. In the past I've hated how I'd always ended up with some dry slices, but not here.

I like Cook's Illustrated's method for spiral sliced ham so I used the same method here and just added different glaze rather than the orange maple one they used.

So many ham recipes (at the same weight) are cooked at 375 degrees for up to 3 hours but why? The ham is already fully cooked, it just needs to be warmed through for serving.

Here the ham is first brought up to room temperature in warm water so it heats more evenly in the oven. From there it's wrapped in an oven bag for faster cooking, and moister end result.

And then finally at the end it's unwrapped and coated with the glaze and heated at a higher temperature to help brown and caramelize it a bit.

It's the perfect protein for a holiday feast!

Breakfast Egg Muffins

Welcome to what may likely be your new go-to breakfast! Our family loves these egg muffins for a quick before school and work breakfast (we serve them with freezer friendly healthy blueberry muffins or oat flour pancakes with blueberry syrup).

They are a nutritious option to start out the day, and there are countless ways you can make them by swapping in your favorite mix-in blends (see some ideas below).

They also store well in the fridge and freezer making them such a tasty make-ahead side dish. In other words it’s a good time to swap out those boring granola bars for this flavorful homemade breakfast instead!

Crock Pot Ham https://www.cookingclassy.com/crock-pot-ham/ https://www.cookingclassy.com/crock-pot-ham/#comments Thu, 18 Nov 2021 05:28:58 +0000 https://www.cookingclassy.com/?p=62812 Flavorful Crock Pot Ham! A spiral sliced, bone-in ham is coated with a sweet and lightly tangy glaze and slow cooked until just heated through and tender. It's perfect for holidays and weekends and it's so easy to make!

Serve it with twice baked potatoes and cornbread for a classic meat and potatoes dinner.

Slow Cooker Spiral Sliced Ham

One of best ways to cook a (pre-cooked) ham in a crock pot is to cook it on low, covered with a simple glaze to upgrade it, just until it's heated through.

Here a savory smoked ham roast is generously coated with the perfect autumn inspired glaze. It includes apple juice concentrate, maple syrup, brown sugar and mustard. It lightly sweetens the ham and gives it a welcome extra layer of flavor.

At the end of cooking, you can choose the thickness preferred for the glaze. It will be very runny (more like a broth) so you can choose to thicken those juices from the crockpot with some cornstarch, or just keep it as is and spoon some over the sliced ham for added moisture and seasoning.

This is a recipe that is easy to modify to include other flavors you like or use up ingredients you may have on hand. Here are some ideas:

Possible Substitutes

  • Try it with pineapple juice concentrate in place of apple juice concentrate.
  • Switch out the spice. We went with ginger because I like it with this blend of ingredients but cloves or even cinnamon can be added.
  • You could even use fresh ginger here in place of dried (add a few teaspoons).
  • If you don't have real maple syrup try it with honey.
  • Dijon Mustard will work for spicy brown mustard. Add more mustard if you want more tangy flavor.

It's a comforting, casserole-like, all cooked in one skillet, homestyle dish that everyone will love!Photo: Serving of breakfast hash on a white ceramic plate with oranges to the side. Easy Breakfast Hash

This is a fantastic savory breakfast but also makes an excellent dinner too! It's incredibly easy and perfectly hearty and satisfying.

Truly it's just stick-to-your-ribs good food!

It's also a versatile recipe with lots of options to swap out ingredients (such as using cooked sausage in place of ham) or add seasonings you enjoy (such as cajun seasoning).

It may soon become one of those recipes that you're family enjoys so much you'll have it memorized. And there's really not a whole lot to it, just some basic ingredients you can always keep stashed in your fridge.

If you really want to go all out pair it with buttermilk pancakes - finished with blueberry syrup and whipped cream of course!

Strata https://www.cookingclassy.com/strata-recipe/ https://www.cookingclassy.com/strata-recipe/#comments Sat, 27 Mar 2021 06:50:22 +0000 https://www.cookingclassy.com/?p=59885 My favorite Strata recipe! This delicious dish is made with hearty artisan style bread, fresh spinach and bell pepper, flavorful ham, bold cheddar cheese, and a rich egg custard. All together in one! What's not to love?

Overheat photo of strata casserole in a white rectangular baking dish.

What is a Strata?

A strata is an American brunch casserole dish made up of layered pieces of bread, meat or vegetables, often cheese, and it's all soaked in an egg and milk mixture. It's oven baked until cooked through and set, and then cut into squares and served warm.

It's something like a savory French toast, with mix-ins!

I love this for a change because a lot of breakfast foods are sweet, or coated in something sweet. Like pancakes, pastries, scones, waffles, muffins, and French toast. But it's great to have a more savory option like this strata.

It's so convenient that you can make this the night before you want to serve it, pop it in the oven in the morning and have an easy, hot breakfast ready to serve! An overnight casserole that's great for holidays and weekends.

It also makes a great dinner and leftovers for lunch too. So much deliciousness in every layered bite!

Quiche https://www.cookingclassy.com/quiche-recipe/ https://www.cookingclassy.com/quiche-recipe/#comments Wed, 24 Mar 2021 04:29:56 +0000 https://www.cookingclassy.com/?p=59789 My favorite Quiche recipe! It's made with a buttery, crispy and flaky pie crust along with a rich egg filling and some delicious mix-ins including ham, cheese and herbs! It's perfect for weekends and holidays.

Slice of ham and cheese quiche on a wooden plate set over a green napkin.

What is Quiche?

It is a French tart made with a simple pastry crust (with flour, butter and water) that is filled with a savory egg custard. If often includes veggies, meats, seafood, cheese or herbs mixed in as well.

It's a classic timeless recipe and it always makes for an impressive brunch (or lunch). You'll love leftovers too!

This ham and cheese version is one of my favorites but the mix-in options are endless. You can just replace the ham with 2 cups of other fillings of your choice.

Just stick with the base custard recipe: 5 eggs to 1 1/4 cups heavy cream.

You can also use half and half in place of cream but it's not quite as rich and the crust doesn't seem to stay as crisp.

Frittata vs. Quiche

A frittata is an egg based dish similar to an omelette and has no crust. Generally frittatas are filled with pre-cooked vegetables and they’re started cooking on the stovetop until eggs are set on the bottom then finished in the oven.

A quiche has a crust and is usually richer and less eggy than a frittata (though the quiches I make still tend to err on the side of eggy, I prefer the flavor and texture this way). It is completely oven baked.

Creamy Potato Soup https://www.cookingclassy.com/creamy-potato-soup/ https://www.cookingclassy.com/creamy-potato-soup/#comments Tue, 02 Mar 2021 15:58:00 +0000 https://www.cookingclassy.com/creamy-potato-soup/ Creamy Potato Soup loaded with chunks of tender, hearty potatoes and made with a rich and creamy soup base. This soup is a reader favorite and for good reason - it’s easy to make and absolutely delicious! Top it with cheddar and bacon and no one will be able to resist. Make this for a fast and easy weeknight dinner all winter long.

The BEST Creamy Potato Soup!

This is my idea of the perfect homemade potato soup! It's creamy, it's amazingly filling and it's packed with goodness.

Growing up we had a lot of potato soup. It might have something to do with the fact that my grandparents were potato farmers so that just got passed down. My mom made it probably twice a month and now it's the same for me, especially during cold winter months. We also like to make this when we're sick since sometimes chicken noodle gets boring.

You'll love that it's something everyone in the family can agree on, and even get excited about when announced it's what will soon await for dinner.

It's also a very convenient recipe. Most of the ingredients are food staples you can keep on hand that don't spoil quickly. The potatoes, carrots, celery, and onions store well for weeks (and if you opt for bacon that keeps great in the freezer). If you need more protein, you can add some sausage or Greek yogurt for your nutrition goals.

This easy potato soup recipe is one I would deem worthy of your recipe book! It's an ultra-comforting and cozy dish you'll turn to time and time again. Perfect for fall get-togethers!

Plus it makes great leftovers for lunch the next day if you happen to have any left. Serve with your favorite no knead bread!
