They're great for an on the go breakfast sandwich, a weekend brunch, or even for a make ahead freezer friendly breakfast option.

Sheet Pan Baked Eggs

This recipe, made with an abundance of 18 eggs, makes enough to feed plenty of hungry people. I'm not sure why I hadn't thought of cooking them this way before decades ago, but it works incredibly well to cook a large batch of eggs at once on a baking sheet.

They are similar to the texture of a baked frittata or like the eggs you'd find in a breakfast sandwich at a bagel shop.

The best part is that preparation is a total breeze. All the eggs are whisked together, creamy half and half is added, and then from there any optional add-ins are tossed in and it's all baked on one big sheet pan.

You can cut and serve them buffet style right from the pan, layer them between an English muffin breakfast sandwich with bacon and avocado, or pair them as a side to a hot griddle item such as pancakes or French toast.

Try them plain and simple with just cheese mixed in for a basic option, then when you are feeling more adventurous add lots of different mix-ins (just like you would a frittata. Lots of ideas listed below).

Pumpkin Dump Cake https://www.cookingclassy.com/pumpkin-dump-cake/ https://www.cookingclassy.com/pumpkin-dump-cake/#comments Wed, 22 Nov 2023 17:54:17 +0000 https://www.cookingclassy.com/?p=68690 Easy Pumpkin Dump Cake! This is like two delicious dessert flavors in one - creamy pumpkin pie paired with rich yellow cake. It's a delicious duo, made with shortcut ingredients, and it's very reminiscent of a rustic cobbler.

Pumpkin Cobbler Style Cake

This homestyle, cozy autumn dessert is something that should be made a least once during the holiday season each year. It comes together in minutes, doesn't require making pie crust and you get the bonus of sweet cake atop.

It's the perfect alternative treat for those who don't prefer pie and would be a welcome addition at a holiday feast.

I've made it the traditional way with box cake mix to make it speedy, though you could try whipping up your own blend if you've got a little extra time (see note below).

It's a no-fuss, minimal effort dessert that uses pantry staples and leaves you with a crowd pleasing old fashioned style, utterly delicious cake!

A dreamy dessert that's made with a rich homemade vanilla pudding, and abundance of fresh bananas, and two layers vanilla wafer cookies that soak up some of the pudding as they soften to the perfect texture.

Homemade Banana Pudding

This banana pudding recipe has it all. The pudding is made with half and half for richness, egg yolks and cornstarch for a sure thickening, just the right amount of sweetness, and to fancy it up we add a vanilla bean and fresh grated nutmeg for flavor.

Then it includes a generous amount of just ripened bananas, and of course those simple but ever so nostalgic store-bought vanilla wafers. And no baking required.

It's as good as it gets!

This is a year round dessert that's perfect for a holiday celebration, a welcome addition to a weekend dinner, or just because you want a treat yourself kind of indulgence today.

Serve it up laid back casserole style in a baking dish or make it more elegant and serve in individual tumblers or dessert cups.

Have family or friends help with this fun layered cooking project that once complete is amazingly refreshing and satisfying with each and every bite!

Cream of Broccoli Soup https://www.cookingclassy.com/cream-of-broccoli-soup/ https://www.cookingclassy.com/cream-of-broccoli-soup/#comments Tue, 01 Nov 2022 04:25:15 +0000 https://www.cookingclassy.com/?p=64982 Homemade Cream of Broccoli Soup - It's rich and creamy, lightly cheesy (with parmesan!), has hints of garlic, and an abundance of fresh broccoli. This made from scratch soup is simple yet so delicious!

Lots of Broccoli Broccoli Soup

When we think of broccoli soup we often think of the incredibly popular broccoli cheese soup. Cream of broccoli soup may be its not as popular cousin but it deserves no less attention.

It doesn't require many ingredients nor a whole lot of prep, and the completed soup is not bold but perfectly balanced with flavor leaving room for the broccoli to shine.

It's creamy goodness makes it perfectly dip-able for a homemade bread or a fresh loaf you picked up at the market, and a side salad of some sort pairs beautifully (this season I'd suggest kale salad or pear spinach salad). Or you may choose to keep it super basic for lunch and just pair it with crackers.

This is just simple goodness and easy comfort food that doesn't need much.Pot filled with cream of broccoli soup.

One Pot Chili Mac https://www.cookingclassy.com/chili-mac/ https://www.cookingclassy.com/chili-mac/#comments Thu, 27 Oct 2022 03:49:18 +0000 https://www.cookingclassy.com/?p=65769 Cozy One Pot Chili Mac! It's classic beef chili that's upgraded with macaroni pasta and rich cheese for a flavor mashup that doesn't disappoint! It's a one pot dish and a breeze to make.

One Pot Chili Mac

This is the perfect sweater weather recipe! It's hearty, homemade comfort food that's brimming with flavor and it's just the dinner friends and family of all ages will love on a cold day.

One thing I think you'll really appreciate about this recipe is that many of the ingredients are things you may likely already have on hand, especially if you keep a pack or two of ground beef stashed away in the freezer. I love a one-pot meal, especially for weeknight dinners.

And just like regular chili (or American goulash), it's so versatile that you can swap in other ingredients you have on hand for those you don't (see ideas below for substitutes). I've added carrots to chili before so really just about anything goes.

Then top it as you'd like with all your favorite toppings. You can't go wrong with a sprinkle of green onions and more cheese!

They're reminiscent of a cake donut and such a tempting cookie you'll want to make again and again every fall season!

Pumpkin cookies with chocolate and vanilla icing.

A New Favorite Fall Recipe

We all love the classic pumpkin chocolate chip cookies but sometimes it's nice to switch up tradition for something different but equally as delicious. These iced pumpkin cookies fill that space perfectly.

These are a very similar to those cakey pumpkin flavored cookies we are used to but dark chocolate chips are omitted and instead they're finish them with two types of icing and chopped nuts.

They may just take the winning lead for your favorite fall cookie!

They are fun to decorate two. One way I came up with is to use both types of icing and finish with a criss-cross pattern that becomes a pretty autumn plaid design. All you need is to small resealable bags or two piping bags to create it (and snip a small corner away with scissors to drizzle over).

Just plain on two per person because most likely everyone will want to try each type of icing. Let us know which you love the most!

Breakfast Egg Muffins

Welcome to what may likely be your new go-to breakfast! Our family loves these egg muffins for a quick before school and work breakfast (we serve them with freezer friendly healthy blueberry muffins or oat flour pancakes with blueberry syrup).

They are a nutritious option to start out the day, and there are countless ways you can make them by swapping in your favorite mix-in blends (see some ideas below).

They also store well in the fridge and freezer making them such a tasty make-ahead side dish. In other words it’s a good time to swap out those boring granola bars for this flavorful homemade breakfast instead!

Iced Coffee

Homemade Iced Coffee

Making iced coffee at home is such an easy process and you only need a few ingredients. The key is just using robust, richly roasted coffee beans and allowing a generous soak time.

When you make at home you get to make it as mild or intense in flavor as you'd like, and adjust it to be as sweet or creamy as you'd like as well. You've also got the option to make it with regular or decaf coffee as well.

No need to leave the house early to take the extra time to stop by the coffee shop when you can make it at home in minutes (just plan some extra time to let the ground beans soak overnight).

Plus you don't need any fancy equipment here. You have the option of using store-bought coarsely ground coffee beans or grinding whole beans on your own.

Then from there you just need a sieve, and cheesecloth or a coffee filter to strain it.

It's a delicious iced coffee that's equally as good as you'll get at any coffee shop and you can make it for a fraction of the cost!
