Huevos Rancheros https://www.cookingclassy.com/huevos-rancheros/ https://www.cookingclassy.com/huevos-rancheros/#respond Wed, 18 Sep 2024 04:44:41 +0000 https://www.cookingclassy.com/?p=73374 Flavorful and hearty Huevos Rancheros - A deliciously scrumptious Mexican breakfast made with fresh ingredients, served warm and cozy, and sure to satisfy those bright spicy cravings. You'll have these devoured in minutes!

Huevos rancheros served tortillas, salsa ranchero, fried eggs, avocado, and cotija.

What are Huevos Rancheros?

Huevos Rancheros is a traditional Mexican dish made up of warmed corn tortillas, a cooked salsa (red tomato salsa or green tomatillo salsa), and fried eggs. It is pronounced way-vows-rhan-che-rohs and translates meaning rancher's eggs.

They are frequently served with refried beans or black beans on top or as a side, and you can garnish them with various toppings.

This version is easy to prepare and is fairly quick compared to other versions. That is thanks to a food processor, because we skip the option of roasting the tomatoes and veggies for speed (though there's no lack in fresh flavor), and here  the recipe calls for ground chili powder rather than managing the steps of whole dried peppers.

This Huevos Rancheros is practically perfect and such a welcome comforting way to start the day. You may even likely find you are craving it for not only breakfast but lunch or dinner too!

Make it a complete meal served with chorizo or sausage, and don't forget that side of beans.

Mini Cupcake Recipe Ingredients

  • All-purpose flour: If you want an even more delicate crumb you can use cake flour.
  • Baking powder: This is used to help the cupcake rise. I recommend using aluminum free baking powder for a non-metallic taste.
  • Salt: Salt really helps balance out the sweetness of the cupcake and keeps it from tasting flat.
  • Unsalted butter: Fat add richness to the cupcake and moisture. It also softens the crumb texture.
  • Granulated sugar: Sugar is a key ingredient in sweetening the cupcake.
  • Milk: I like to use whole or 2% milk for the recipe.
  • Egg: The egg helps to bind ingredients together and assists in rising.
  • Vanilla extract: A traditional ingredient in cupcakes and other baked goods that adds notes of sweet and welcomed natural flavor.
  • Milk: This is used for the moisture for the cupcake.
  • Powdered sugar: A very fine sugar also known as confectioners sugar that builds the foundation of the frosting and sweetens it.
  • Heavy cream: This adds a richness to the frosting while thinning and adding whipped volume once it's blended in and aerated.

How to Make the Frosting

  • This buttercream frosting is very simple and it can be made in a stand mixer or in a mixing bowl using an electric hand mixer to whip.

Other Frosting Flavors to Try

If you want to change things up you could also try one of these three flavors atop these cupcakes in place of vanilla frosting:

Helpful Tips

  • Why room temp. ingredients: Room temperature ingredients such as eggs, milk and butter are recommended so the cupcake batter ingredients to combine together better.
  • Measuring tip: Use a kitchen scale to measure ingredients if possible for the most accuracy.
  • Creaming tip: Be sure to cream the butter and sugar together until light and fluffy as this is what will incorporate tiny air bubbles into the cupcakes and help them rise higher.
  • Reduce sugar: For a less sweet frosting consider a Swiss meringue, Ermine frosting or even a whipped cream topping.

Baked French Toast https://www.cookingclassy.com/baked-french-toast/ https://www.cookingclassy.com/baked-french-toast/#comments Sun, 17 Mar 2024 19:22:46 +0000 https://www.cookingclassy.com/?p=70704 Baked French Toast - A big family friendly size batch of homemade French toast! Made with bakery soft French bread soaked in a rich and cinnamon-y egg custard, all baked together in a single baking dish, then it's cut into individual slices or squares to serve.

Baked french toast cut into individual slices.

Easy French Toast Bake

The great thing about this baked French toast recipe that sets it apart from others is that there's no need to soak the French toast overnight or even for hours in the fridge. It's baked right after it's prepared.

And this version doesn't require chopping into small cubes or adding a crumble topping (like a French toast casserole, which can be delicious but requires more effort). This version is very similar to the real thing (like this French toast) and it's also rich and delicious like bread pudding (just not as sweet and custard-like).

The process is almost the same as making a typical batch of French toast. You cut stale bread into slices, soak it in an egg custard briefly then instead of frying on a hot griddle you just align all the slices together in rows in a baking dish and bake it together in the oven. No tending to and turning individual slices.

It's creates a delicious holiday brunch or it makes a fun choice for a lazy Sunday breakfast, and any extra will be a treat for breakfast before work on Monday! Top it with maple syrup or try it with Buttermilk Syrup for a real splurge.

Sheet Pan Eggs https://www.cookingclassy.com/sheet-pan-eggs/ https://www.cookingclassy.com/sheet-pan-eggs/#respond Wed, 13 Mar 2024 03:51:46 +0000 https://www.cookingclassy.com/?p=70648 Sheet Pan Eggs are an incredibly simple, highly adaptable, crowd-friendly recipe made with a few staple ingredients. They're great for an on the go breakfast sandwich, a weekend brunch, or even for a make ahead freezer friendly breakfast option.

Bacon, tomato, spinach eggs in a baking sheet.

Sheet Pan Baked Eggs

This recipe, made with an abundance of 18 eggs, makes enough to feed plenty of hungry people. I'm not sure why I hadn't thought of cooking them this way before decades ago, but it works incredibly well to cook a large batch of eggs at once on a baking sheet.

They are similar to the texture of a baked frittata or like the eggs you'd find in a breakfast sandwich at a bagel shop.

The best part is that preparation is a total breeze. All the eggs are whisked together, creamy half and half is added, and then from there any optional add-ins are tossed in and it's all baked on one big sheet pan.

You can cut and serve them buffet style right from the pan, layer them between an English muffin breakfast sandwich with bacon and avocado, or pair them as a side to a hot griddle item such as pancakes or French toast.

Try them plain and simple with just cheese mixed in for a basic option, then when you are feeling more adventurous add lots of different mix-ins (just like you would a frittata. Lots of ideas listed below).

It's baked as one giant pancake in a hot oven then after finishing it's cut into individual squares. They're tender and fluffy with a light buttermilk tang, and they have just a hint of sweetness allowing room for your favorite syrup finish.

Try pairing them with homemade fresh strawberry syrup or blueberry syrup and billowy sweetened whipped cream for a glistening crowning finish!

Stack of sheet pan pancakes with butter and syrup.

Easy Oven Pancakes!

A modern approach and streamlined practical way to make a big batch of homemade pancakes! Once you try this method for preparing pancakes it may be hard for you to return to the old method of standing and tending to individual pancakes. This sheet pan pancake is just a one and done type recipe.

You just prepare the simple homemade pancake batter (that calls for basic ingredients), pour it all into one big baking sheet, throw it in the oven and you've got a generous family size serving of pancakes!

They are also great for make-ahead breakfasts too and can even be frozen for a quick weekday breakfast for those hectic mornings.

With these sliceable pancakes you still get all the cozy homestyle goodness and satisfying flavor of traditional pancakes without all the extra effort!

Hot Honey Chicken https://www.cookingclassy.com/hot-honey-chicken/ https://www.cookingclassy.com/hot-honey-chicken/#comments Sun, 11 Feb 2024 05:23:13 +0000 https://www.cookingclassy.com/?p=70344 Sweet and spicy Hot Honey Chicken - Chicken strips are breaded in crushed cornflakes then oven baked until tender, then they're finished with a prominently flavored fiery hot honey sauce that will leave your tastebuds craving more!

Hot Honey Chicken strips covered with crispy cornflakes and oven baked then drizzled with hot honey sauce.

Crispy Baked Chicken Strips with the Best Sauce

Sweet and sticky, peppery and bold, this hot honey chicken will be an absolute hit for spicy food loving fans.

To make it it's a simple process of dredging chicken pieces through a trio of coatings then baking them all at once. And the final finish of tempting hot honey sauce couldn't be easier to make. It only requires 3 ingredients that together create the most crave-able sauce. Honey, Sriracha, and butter.

The honey of course brings the sweetness, the hot sauce perfectly enhances it with striking brightness, and the butter balances and tones it out as well as bringing in a layer of richness. You'll want to add this sauce to everything!

This hot honey chicken can be served as a party appetizer, a game day favorite, or as a main dish entree paired with the classic sides (see ideas below).

My few tips with this recipe are to generously coat the chicken with the finely crushed up corn flakes, which will offer plenty of crunch. And wait to add the sauce until immediately before serving or even use it as a dip to keep the chicken strips extra crisp.

Greek Lemon Chicken Soup

Avgolemono soup is one of the quickest, easiest and freshest tasting soups you can make! It's a humble soup made with basic ingredients yet it packs so much bright flavor thanks to all the fresh lemon in it.

It has a nice light herbiness to it and it gets it's creaminess from the starches of the rice and the use of eggs blended into the broth.

We love it paired with a side salad and fresh made pita bread, but fresh rustic bread drizzled with good olive oil is also another tasty pairing option for a basic yet delicious, hearty and carby, get feeling better meal.

They are such a comforting mediterranean food and there are so many different ways to serve them.

Looking for more ways to make meatballs? Also try my super popular Italian Meatballs and the healthier Turkey Meatballs.

Greek Keftedes

Keftedes are a popular Greek dish made with ground beef, lamb or pork, bread crumbs (dried or fresh) with a liquid to soak, egg to bind, and to flavor they include onion and fresh herbs such as mint and parsley. Traditionally they are pan fried in oil but for a healthier alternative they can be oven baked (I've included both methods in the recipe).

They have delicious rich meaty flavor paired with fresh herby notes, they are beautifully browned, and you'll find them to be incredibly hearty and filling (5 meatballs may not seem like much but it's quite a generous serving).

These can be served bowl style as a main dish combining them with other sides, or stuffed in a sandwich, or you can opt to serve them as of an appetizer on a mezze platter. See serving suggestions below.

This humbly simple French style yogurt cake is perfectly fit for entertaining or a birthday celebration, yet it's mildly sweet also making it ideal for a weekend breakfast.

It's a tender cake thanks to its high yogurt content and the taste has a nice faint tang and depth of flavor.

And you wouldn't believe how effortless it is to make. It's a cake that doesn't require a mixer at all, it's a simple batter mixed by hand.

The other great thing about it is that you don't need to wait for it to cool completely before slicing and serving. It can be served a bit warm which is great during cooler months, or when you simply don't have the time to wait hours for a decadent homemade cake.
