Thai Chicken Lettuce Wraps https://www.cookingclassy.com/thai-chicken-lettuce-wraps/ https://www.cookingclassy.com/thai-chicken-lettuce-wraps/#comments Wed, 19 Jun 2024 19:10:13 +0000 https://www.cookingclassy.com/?p=24328 Thai Chicken Lettuce Wraps are a flavorful Asian dish made with lean protein, veggies, a sweet and savory sauce and a variety of satisfying garnishes. You can serve them as an appetizer, side dish or main dish.

Filling Thai Chicken Lettuce Wraps

These Thai Chicken Lettuce Wraps are everything you'd want them be and then some! They have well rounded flavor, you'll find them easy to make, and they have the perfect crunch factor thanks to the tender crisp veggies, lettuce, and peanuts.

The chicken (or turkey) keeps them nice and filling but if you want an even heartier meal you can serve these with a side of rice.

You can adjust the sauces here to suite your taste. If you like the flavor of fish sauce you can add more. If you love heat load them up with the Sambal Oelek or Sriracha. And for more peanut flavor be sure to try them finished with a creamy peanut sauce (it so delicious and worth the extra bit of effort).

I know it's a fairly lengthy list of ingredients here but I don't recommend leaving any out. Everything comes together beautifully to create a truly tasty, veggie and chicken-filled lettuce wrap that you'll want to make on repeat.

Ground beef is browned in a hot skillet and finished with a simple, yet flavorful sauce. It's an undemanding recipe worthy of the weeknight dinner rotation.

Shortcut Korean Beef

Traditional Korean beef bulgogi is incredible of course, but this Korean ground beef bowl recipe is even easier (no marinating or slicing beef), faster, and it's cheaper.

After just one bite I think you'll completely appreciate this dish. Those sweet, salty, and umami flavors over the richness of the well browned beef are simplicity at it's best.

Then when you pair it with fresh veggies and cozy rice and you've got a tempting, piled high bowl of hearty and delicious comfort food the whole family can agree on!

Strawberry Rhubarb Crisp https://www.cookingclassy.com/strawberry-rhubarb-crisp/ https://www.cookingclassy.com/strawberry-rhubarb-crisp/#comments Wed, 01 May 2024 16:32:42 +0000 https://www.cookingclassy.com/?p=19739 Easy Strawberry Rhubarb Crisp - it features a crunchy oatmeal crisp topping paired with a vibrant, fresh and fruit strawberry rhubarb filling. This heavenly dessert creates an unforgettable combination of sweet and lightly tart, and it finishes beautifully with an indulgent scoop of rich vanilla ice cream.

Easy Strawberry Rhubarb Crisp Recipe

Have you ever tasted the strawberry rhubarb flavor combination before? Once you do you'll instantly fall in love! It's reminiscent of a strawberry lemon combo but with more uniqueness and depth to it.

My favorite way to eat rhubarb is baked into a dessert, paired with fresh strawberries of course. There are so many things I want to try with this combination like a strawberry rhubarb compote for angel food cake, a strawberry rhubarb crumb cake, or combining the two together for a syrup to serve over buttermilk pancakes.

Someday I'll get there, but for now it's all about this truly delicious strawberry rhubarb crisp.

This strawberry rhubarb crisp is deliciously saucy with just the right amount of sweetness, and the contrast in textures is spot on. You get a tender and juicy fresh fruit filling blanketed with a crispy oat crumble highlighted with butter and sweet brown sugar notes.

This fruit crisp is a must try spring and summer dessert recipe! Just don't forget the ice cream, because it's the ultimate finishing touch for this.

Cinnamon Roll Cookies https://www.cookingclassy.com/cinnamon-roll-cookies/ https://www.cookingclassy.com/cinnamon-roll-cookies/#comments Mon, 11 Dec 2023 19:52:47 +0000 https://www.cookingclassy.com/?p=69645 Cinnamon Roll Cookies - A deliciously buttery, super soft cream cheese sugar cookie, swirled with mesmerizing cinnamon sugar and finished with a sweet vanilla glaze. These delectable cookies taste just like a cinnamon roll!

Sliced soft cream cheese cinnamon roll cookies showing pretty cinnamon sugar swirl.

Soft Cake-Like Cinnamon Roll Cookies

I made many batches of these cookies until I finally perfected them and achieved that true cinnamon roll flavor and a similar soft texture to what you get from a real cinnamon roll. The secret was to add a whole brick of cream cheese into the cookie dough (rather than making a thick sticky frosting that only covers the pretty design of the cookies). It added great flavor and improved overall texture.

These super tender, melt-in-your-mouth cookies have a fluffy Lofthouse cookie style softness. And their flavor is light tangy, deeply cinnamony, richly buttery, and highlighted with vanilla.

The cookie dough itself isn't very sweet but once you layer it with brown sugar and cinnamon and finish them with a sweet icing it has just the right level of sweetness you hope to get from a cookie.

Just plan ahead with these cookies. You'll need some time for the dough to chill so it's not overly sticky to work with and time to allow the icing to set. They'll make a great weekend baking project.

And fortunate tasters will be smitten with their reminiscent cinnamon roll flavor!

They're an absolute treat and these nostalgic cookies will likely remind you of the old fashioned cookies from childhood.

Tempting Oatmeal Cookies Cookies with Icing

These are a cookie people won't forget! Like Mother's Iced Oatmeal Cookies but a far better homemade version.

They have a deliciously oaty flavor, a tempting texture, a fair amount of those inviting warm spices, and the crisp icing that finish over the top that makes a crowning highlight.

The soft and chewy texture of these frosted oatmeal cookies comes from brown sugar and partially ground oats, it's key to these delectable, homestyle cookies.

These iced oatmeal cookies can be baked up more chewy or more crisp, whichever you prefer. If you'd like them to be more soft and chewy, then bake them near the lesser amount of time, and for a crispier cookie bake them for the greater amount of time.

Pumpkin Cobbler Style Cake

This homestyle, cozy autumn dessert is something that should be made a least once during the holiday season each year. It comes together in minutes, doesn't require making pie crust and you get the bonus of sweet cake atop.

It's the perfect alternative treat for those who don't prefer pie and would be a welcome addition at a holiday feast.

I've made it the traditional way with box cake mix to make it speedy, though you could try whipping up your own blend if you've got a little extra time (see note below).

It's a no-fuss, minimal effort dessert that uses pantry staples and leaves you with a crowd pleasing old fashioned style, utterly delicious cake!

Easy Hot Fudge Sauce https://www.cookingclassy.com/hot-fudge-sauce/ https://www.cookingclassy.com/hot-fudge-sauce/#comments Thu, 07 Sep 2023 01:46:08 +0000 https://www.cookingclassy.com/?p=68557 Quick and Easy Hot Fudge Sauce! A homemade recipe made with a few simple ingredients that's sure to satisfy those chocolate cravings. It's perfect for drenching over a hot fudge sundae or fresh fruit, smothering brownies, garnishing a pie, dunking churros or eating straight from the fridge by the spoonful!Hot Fudge Sauce

New Go-To Homemade Hot Fudge Sauce

I've tried many hot fudge sauce recipes over the years and I have even shared a few others here. But as time goes on and I try new favorites, or find something easier I love to share them with you here.

This fudge sauce is made with just six simple ingredients! And you can have it ready in about 10 minutes (just plan an extra 10 to cool if you don't want it smoldering hot).

It's richly chocolatey, perfectly sweetened, silky smooth and luscious, and it makes for the ultimate molten topping over a refreshing dessert creating a tantalizing hot and cold duo.

Possible Variations

This chocolate sauce made with pantry staples and it's a versatile recipe as well.

  • You can swap bittersweet chocolate chips with semi-sweet or dark.
  • Brown sugar can be replaced with white sugar.
  • If you are out of vanilla you can even skip it here (there's usually some in the chocolate chips).
  • Make a salted fudge sauce by increasing the amount of salt added and go for sea salt. You can even just garnish flaky salt over the fudge sauce when serving.

Then the best way to enjoy it is the traditional way, poured generously over a bowl of fresh scooped ice cream. Flavors like vanilla, strawberry, cherry, pistachio or chocolate will always complement it well.

But if you want a bit of a healthier option then drizzle a little of this chocolate fudge sauce over fresh strawberries, bananas, raspberries, mangoes or peaches to give them a decadent chocolate upgrade.

Blondies https://www.cookingclassy.com/blondies/ https://www.cookingclassy.com/blondies/#comments Fri, 26 May 2023 04:50:02 +0000 https://www.cookingclassy.com/?p=56377 The best Blondies recipe! Made with sweet, vanilla flavor, they’re soft and moist in the center yet slightly crisp on the outside. Studded with gooey white chocolate chips in every bite, they’re sure to satisfy the strongest sweet tooth.

Stack of blondies with white chocolate chips.

What Are Blondies?

A truly mouthwatering dessert, blondies are often confused with brownies and are even sometimes called blondie brownies. To be clear, blondies and brownies are not the same things, but they do have similar ingredients.

Both desserts are made with a base of sugar, butter, eggs, and flour. However, blondies do not contain cocoa powder, which is a key contributor to any good brownie recipe. Instead, the star of the show in blondie recipes is browned butter which is made with butter and brown sugar.

As a result, blondies have a rich, indulgent flavor and a soft, slightly chewy texture. They’re typically baked into bars and often contain a variety of different mix-ins. You’ll find white chocolate chips and walnuts in this easy blondie recipe.

No matter how you prepare and serve them, blondies are truly a unique dessert that is perfect for every occasion from holiday parties to afternoon snacks.

Ingredients needed to make homemade blondies bars.

Blondie Recipe Ingredients

  • All-purpose flour: I use unbleached flour although bleached would be fine. I haven’t tested this recipe with gluten-free flour, but it should work with a 1:1 alternative. Please let us know how it turns out if you do.
  • Salt: Regular table salt works well here.
  • Baking soda: There's just a hint of this used in the recipe for a denser bar, similar to a brownie. You can increase to 1/2 tsp for a fluffier blondie.
  • Unsalted butter: I recommend using unsalted butter to avoid overpowering the flavor but salted can be used as long as you reduce the amount of extra salt included.
  • Light brown sugar: This is used to create browned butter, creating the distinct, decadent flavor blondies are known for having.
  • Eggs: These help provide structure to the recipe, allowing the bars to hold their shape. I haven’t tested these blondies with any vegan substitutes. I’m not sure how well it would work since most of them tend to require a lot of liquid.
  • Vanilla extract: Use pure vanilla extract and not imitation varieties.
  • White chocolate chips: Include whatever brand you like best.
  • Walnuts: Although optional, these provide a nice crunch to offset the delicate texture of the blondie bars.

Six photos showing steps of making blondie cookie bar batter.

How To Make The Best Blondie Recipe

  1. Prepare: Preheat the oven to 350 degrees. Butter a 9x13 baking dish, arrange parchment paper on top and butter the paper liberally before setting the dish aside.
  2. Whisk dry ingredients: In a large mixing bowl, whisk together the flour, baking soda, and salt until smooth.
  3. Brown butter: Place the butter in a microwave-safe bowl, and melt it in the microwave. Set it aside to slightly cool. Then, stir in the brown sugar.
  4. Mix wet ingredients: Add the eggs and vanilla to the bowl with the butter sugar mixture. Break the yolks with a spoon, and stir just until the ingredients are combined.
  5. Combine wet and dry ingredients: Gently pour the flour mixture into the bowl of wet ingredients, and stir just until they’re smooth.
  6. Fold in extras: Mix the white chocolate chips and walnuts into the blondies batter, distributing them evenly.
  7. Bake: Spread the batter evenly in the prepared baking dish, and bake until a toothpick can be inserted into the center and comes out clean, about 20 to 25 minutes.
  8. Serve: Set your white chocolate chip blondies aside to cool before slicing and serving.

Four steps showing how to finish batter and spread and bake.

Possible Variations

  • Use semi-sweet or dark chocolate chips if preferred.
  • Replace the walnuts with chopped hazelnuts, pecans, or almonds.
  • Sprinkle in pieces of a candy bar.
  • Add butterscotch or toffee chips.
  • Top with colorful sprinkles before baking.

Helpful Tips

  • Avoid over-mixing: For the best blondies recipe, it’s imperative that you mix the ingredients just until they are smooth and no streaks remain. Continuing to stir will overwork the gluten in the flour causing the blondies to become tough and dense once baked.
  • Keep an eye on the oven: Blondies are a bit temperamental, and every oven bakes differently. Given that we want the center to still be slightly gooey, it can be difficult to judge when blondies are done baking. For the best taste and texture, remove them from the oven as soon as the top looks set, and insert a toothpick into the center. If it comes out clean, they’re done. If it’s coated with batter, pop the baking dish back in the oven for a few extra minutes.
  • Cool completely: It can be tempting to dig in right away, but it’s important to allow enough time for the blondies to cool and set completely so they don’t fall apart.

How long do white chocolate chip blondies last?

  • Transfer cooled white chocolate chip blondies to an airtight container.
  • Store them at room temperature for up to 3 days.

Should you refrigerate blondies?

It’s not necessary to keep them fresh, but refrigerating leftover blondies can help extend their shelf-life, allowing them to last for up to 1 week.

Can I freeze them?

  • Yes, kept in a freezer-safe container, blondies can be frozen for up to 3 months.
  • I like to slice the bars and wrap them individually or place a piece of parchment paper between them to prevent them from sticking together before transferring them to a sealable bag or container.
  • To eat, let frozen blondies thaw in the fridge overnight. Then, enjoy them cold, set them out to come to room temperature, or warm them up for a few seconds in the microwave.
