A colorful Asian salad made with crisp cabbage, tender roasted chicken, sweet bell pepper, and a sweet and tangy peanut-sesame dressing.

Ingredients
Dressing
1/4cuplight olive oilor vegetable oil
3Tbspcreamy peanut butter
2Tbsptoasted sesame oil
2Tbspsoy sauce
2Tbsprice vinegar
2Tbspfresh lime juice
2Tbsphoney
1Tbsp peeled and mincedginger
1 1/2tsp mincedgarlic(1 large clove)
1/2tspChinese five spice(optional)
1/4tspred pepper flakes(optional), or more to taste
Salad
1/2large headromaine lettuce,shredded
1/2medium headNapa cabbage,cored and shredded
3cupscooked shredded rotisserie chicken breast
1largered bell pepper,cored, seeded and sliced
1largecarrot,juliened
4green onions,sliced
1/2cup rough choppedcilantro
1/2cup rough choppedpeanutsor cashews
2Tbsptoasted sesame seeds(optional)
Fried wonton strips,homemade or store-bought (optional)
Instructions
Make the dressing: In a medium mixing bowl whisk together oil, peanut butter, sesame oil, soy sauce, rice vinegar, lime juice, honey, ginger, garlic, Chinese five spice and red pepper flakes.
Transfer dressing to fridge and chill preferably for 30 minutes (or freeze for 15).
For the salad: In a large serving bowl toss together lettuce, cabbage, chicken, bell pepper, carrot, green onions and cilantro. Top with peanuts and sesame seeds.
Add dressing to entire salad and toss or add dressing to individual servings. Serve immediately after adding dressing.
